    1/2 Lb Fettuccine Noodles, Dry or Fresh
    1/4 Lb Butter, Preferably European
    1/4 Lb Parmigiano-Reggiano, grated fine
    Cook noodles in a large pot of salted boiling water. (Dry - 8 minutes, Fresh - 2-3 minutes) Warm up a large skillet. When noodles are done start melting butter in the pan, turn off heat once melted and add noodles (Drain but reserve a few ladles of pasta water or pull noodles directly out of water with tongs right into the pan) along with a pinch of salt and start whisking noodles vigorously with tongs. while mixing, add a handful of cheese along with a ladle of pasta water. Keep whisking until cheese melts. Continue adding cheese until all is used up. Add a little more pasta water, if needed, to make a smooth sauce.
    Add a grind of pepper if desired.

    "Wer're gonna eat well tonight". Hell yeah! With butter. And Parmigiano-Regianno, too. No violinist? No worries, Jill! I don't need to do this tableside and impress my friends. I wanna do it in the kitchen and impress myself! Oh wow, when you added the salt, I could get a whiff of the smell of salted pasta through the screen. Was that awesome or what? What a great recipe! By the way, your martini needs a few olives :)

      Lol!! I never add the olives because I never eat them. But for you, I'll add a few next time!

      Hi Norma!! I don't remember a Malibu Chicken Sandwich from my school days. So ask hubby...... There was (and maybe still is in some parts) a chain called Sizzler where they had a dish called Malibu Chicken. It was a breaded chicken patty topped with ham and swiss cheese and I think I remember some kind of a mild mustard sauce with it. Is that something similar? Every now and then I do restaurant dishes (either places that are still open or from the past). Does that sound like what he's asking for?

    I love this recipe - I made this for my husband a few days ago since fa is one of his favourite pasta dishes and he actually loved it while I liked it since I tend to despise cream based sauces because they are so bland, but take out the cream and just leave the cheese and it becomes magical.

      Totally think you are right about the addition of cream - never thought about but yeah that makes sense it was an attempt to economize the dish because true Parmesan is so expensive, but the result is just not the same.

    I really like your videos and the food history, The stories are fun. I'm going to try this. It looks like you only added half the cheese in your video. Help me understand that.
    Also, I've made alfredo sauce on the stove for years with various success. One of the reasons the cheese doesn't incorporate is that the cheese I used had too much moisture. It has to be a very dry parmesan. I was using high quality raw cream and some pre shredded cheese and found that the ultra pasteurized cream and powdered shelf stable cheese worked better . Though, I will say, even that sometimes fails. Sometimes it works perfectly. It might be temperature and how slowly the cheese is added. But now I will buy good parmesan and grate it myself and make it in the pan with butter and the pasta water. I will try it. Though what is now known as alfredo sauce has its uses. :)

      Hi Radiantlux! Wow, this is one of my very early videos. But I still love the story! I really wanted to show what real Alfredo was.
      I stopped adding cheese when the pasta was well coated. I probably should have mentioned that but I was so new and learning.
      And oh yes, moisture content can make a difference which is why I was talking about the butter. But cheese can be the same. I love all of the things you've discovered through trial and error. Give Parmesano Reggiano a go and let them know.
      There is definitely a place for Alfredo, it's what most people think is the authentic sauce. But it's wonderful to experience the real deal! I hope you are having a great weekend! 🍸❤️

      I have and it works just fine. But if you can, try the original parmigiano reggiano, its so delicious!
