My enchiladas are something I was taught in a restaurant. They are similar though in that you have it all prepared and don't require baking. They are almost the opposite of these though. I make the filling in the pot almost like a chili or soup, then I just brush the tortillas with sauce. Very finely diced potato is the secrete to the recipe. I'm not 100% sure what they do in the recipe, I think they add texture and maybe thicken the filling a little through starch and absorption. I know they are missed if they are not used, so I use them. I will be trying this one sometime. It's much easier than my own.

I think we would love this and I'm actually saving this recipe probably for Christmas Eve I love the red and green colors on top and the lettuce and our big meal is usually on Christmas Day but all the kids are normally home a little bit early from work on Christmas Eve although most have to work I think this would make something special it's something very good

When I have leftover corn tortillas I just toss them in the freezer, then if when I'm feeling munchie I just take a few out, cut into wedges, drizzle with oil and bake at 425 for abotu 10-15 mins, (nearly) instant tortilla chips.
