    Ingredients & procedure:
    For the filling:
    1/4 kilo each of shrimps & ground pork
    some finely sliced spring onions
    Procedure: Remove shell & black veins from shrimps. Rub with 1/2 tbsp each of salt & corn starch then wash & pat dry. Finely mince shrimps, add ground pork & season with 1 tsp chicken powder, 1/2 tsp salt, 1/2 tbsp corn starch, some white ground pepper & sesame oil, add the spring onions. Mix well (try to get a paste-like consistency). Refrigerate while you work on the dough.
    For the dough:
    Mix 2 cups all-purpose flour with 1/2 tsp salt. Add 2 tbsp vegetable oil and 1 cup ice-cold water. Knead by hand until smooth. Transfer to a lightly floured surface. Divide into 2 portions , roll out thinly using a rolling pin. Cut a rectangular shape. Using a popsicle stick, spread a thin layer of the filling, then roll up to close, pinch both ends to seal.
    Cooking the chewy dumplings:
    Boil enough water to submerge the dumplings. Add a pinch of salt & some vegetable oil. Cook & boil dumplings for 8-10 minutes over medium heat.
    This recipe can make around 30-40 pieces depending on the thickness or size of the dumplings
    (You can use remaining filling for spring rolls or shape into meat balls)
    The boiled chewy dumplings can be eaten as is or dipped in your favorite sauce or can be added as toppings for noodle soups.
