Reema your style of making dosa is not correct. There is a very easy way of temperature control. You have to first put tawa on a very high flame, then sprinkler water to make upper layer cold, then wipe and spread dosa. You can learn the correct style from CookingShooking channel. Aap ghee pehle daalke dosa batter faila rahe ho, aise cheela banta hai, dosa nhi.
That's what I thought yu used the wrong spoon for turning the dosa the first time and spread the dosa always in one direction and yu can make a big dosa

I think u were using wrong side of the palta spatula . And dosa thoda jyada crisp ho to jyada maja ho. But muh mein pani ata hai jab bhi kuchh banato ho.May be u like that way.

Another way to apply the oil tawa is - cut a small onion and cut into two pieces. Take half onion on the fork dip it in the oil and then apply it on the iron tawa before putting the dosa batter. My MIL does that and the dosa comes smoothly.

Here is some Dosa tips that worked for me :
1. Batter should be thinner than what is used. Flowling consistency.
2. When you pour batter , then spread it inside to out in spiral
3. Only start cooking when tawa is super hot
4. Don’t be afraid of dosa looking brown (we northindians think it’s burning, it’s not)

This tawa will give you paper thin dosas (trust me I make daily) and it doesnt need some much oil. never use Tissue paper, use old cotton soft sari or towel, the surface will become smooth. also Onion if used to spread the oil, makes the tawa non stick.
I made paper thin Dosa in normal Griddle (tawa).
