I love unagi. My wife? Not so much. The last time we were in Kyoto we scheduled a day where we had a day to ourselves, without the other person around. Our rental was near Fushimi Inari and there was an eel restaurant on our path to the train stations. I knew she wouldn't want to join me, so I planned to visit them at lunchtime on my solo day. But when I got there they were closed. They were closed because they were doing a photo shoot for a magazine! I never got to have the eel I wanted, but it just means I have another reason to go back to Kyoto!
Let's ditch the wives and eat some unagi!! Mine goes to bed early, so my evenings were filled with late night snacks and drinks. So many places I didn't get to try though. There's always a next time.
This looks excellent. I never knew about the 4 kings of food... but actually they have always been my favorites, and in the order you describe! Eel, Sushi, Tempura, Soba. Maybe I was an Edo-period Japanese in one of my past lives. ビデオありがとうございます!

Here in my country of Denmark, we have a tradition. We eat eel at Christmas and at Easter. The way we eat it is two ways. One is smoked eel, on rye bread with an egg yolk and chives on top. The other way is fried eel, not dipped in batter....umm what is the word?... just covered in wheat flower, and fried on a frying pan, then eaten with potatoes. There is however a downside to eating eel here in Denmark, it is crazy expensive, like over the top expensive! One kilogram of smoked eel cost about 85$. [edit] Of I forgot, there some local islands here that specialize in "fish food" they server smoked eel, cod and herring all year round.
I definitely love unagi too! Every single time I go to a Japanese restaurant that has it on the menu I order it 😋 I'll gladly travel to Kyoto for this restaurant alone ❤️

In some places in America especially Upper New York all the way to Maine people catch eels in some traditional box framed weirs . The box allows all life to travel through and only catch certain pray like eels and fish . Eels are so tasty and full of flavor . Thank you so much for educating and teaching everyone about eels and Japanese culture. The world is to large to have a narrow mindset. Thank you !!
Hitsumabushi is my wife favorite since we went to Nagoya a few years ago. We were too busy trying out other Kyoto's specialties. Will definitely try it next time!

I grow myōga in my garden in northern Italy, along with two varieties of shiso. Here is a nearly unknown plant, but I think is a very fascinating one. I'm always glad to see it employed by someone skilled in its culinary uses. Being myself a gardener and a plant enthusiast, I would very much appreciate a video about some plant species commonly used in Japanese cuisine. As always, thank you so much for all you share about Japan. :)

In Nagoya, where we went for hitsumabushi, the second was eaten with seasoning mixed in with rice and had with the eel. And then the third is with just the eel, rice, and broth. Enjoyed three ways

Saw the shorts and came over here. You are right! It is cheap especially that they have the live eels in the shop! (The one i had been to at narita-san was slightly more expensive)
I don't think I've ever had unagi sashimi either. Plenty of nigiri, though. I definitely understand what you two mean when you say it's dense. It takes a while to chew, though not as much as tako nigiri (octopus). I usually order iidako because it's flavorful while being easier to eat without full-grown tentacles.

Gotta ask though, where I live, eels aren't the most common fish available (for various reasons), how does Japan have such a plentiful supply of eels?
I would love to go here. I'd have to bring a Japanese friend because I can't read Kanji. I had kabayaki in Ginza for about $50 and also in Shinjuku for $15. Both were delicious.
The prices are so cheap for that quality! I'm planning to go to japan when international travel is more stable again and this will definitely be one of my food stops
Unagi is criminally underrated here in the States. I think a lot of people get turned off by the fact that eels look similar to snakes. It's a shame because they're really delicious.

This is the one I regret not to try when I went to Yatai Food stalls in Fukuoka... Again as you mentioned they're kind of on the pricey end so I was hesitant. Hope to go back when and if ever travel restrictions are lifted. >

Eel is the most underrated of all fish meats, in the West at least.
I hope with all my heart you inspire some people to take a chance and try it.
There are local exceptions. Here in Sweden we love eel. Expensive thou since the population are diminished so fishing are heavily regulated.

I don’t use Shinken for my iaido training, but I do use it for tameshigiri cutting mat training!
