What a sync, I cooked the same Ladies Finger Fry today in Iron Pan for the first time. Followed Hema's Kitchen's instruction for seasoning it though.

Even for day to day usage we have to do the all procedures that you have mentioned
just clean after everyday usage and heat it ..after it gets cool just coat with oil to prevent rust ..simple

I do like this when sambar is made I boil tamarind juice and tomato seperately and take out the sambar from iron kadai mix it

Very useful tips. I bought 2no new iron pan, so I was about to ask for maintaining. Very nice heavy once. Can I cook chicken in that. Because we will add tomatoes. Here USA we will get pan shape only. But very heavy and deep also.we also thinking of using iron vessels. Thankyou.😊😊😊😊💐💐💐
yes ma..u can cook chicken..initially cook food without tomatoes ma...after many times of usage seasoning would have become strong and then u can cook with tomatoes..happy that u got iron pan..yes in USA pan would be of very good quality ..u r lucky ma

Heard making puli kulambu in iron kadai is tasty. You mentioned not to use puli. Is it just in the beginning or never to use puli on it at all?
dont use tamarind, tomato,egg initially..after one month of usage , u can cook all types of food sis

after rinsing wipe it off without water and dry ma..so that rust won't form

Mam In shops I saw two types of iron kadai- one is what you showed in video and another one is looking black coated, heavy, costs more than first one per kg. Which one to select mam.
both are good ...only the difference is cost ma..ithu cheap and that is costly

I am not Indian but my Indian friend give me a new Kadai as a gift :-) , I want to ask you about some thing.. you said that we have to remove food from kadai once we finished cooking because of the iron nature which will make food dark and my harm our health ( as I understood) ... but if I have fired a potatoes should I remove the oil from kadai once finished ? or can I leave it for the second firing process which may be after several days?
after cooking any food best to transfer to serving bowl sis to prevent leaching of iron

ok ..initially it will be like silver color before cooking.. when you use it it starts becoming black in color..so no problem

seasoning process is once ..but the maintaining process(applying oil) is compulsory after each use to avoid rust
