Richard Brock, New Orleans Cajun here 82 years old I've watched relatives boil crabs, shrimp, and crawfish in the 40s. We use Zatarains Crab Boil. I squeeze a couple lemons in it and drop the squeezed lemon in the water. I take a large onion just cut it in half drop it in the pot, and I cut a whole head of garlic in half and drop it in the pot, when eating, my guests are hunting and fighting over the garlic oh, la la! They love it. I also put a 1/4 cup or more of Louisiana Hot Sauce in the pot too. Some folks add small 2 or 3-inch pieces of corn on the cob to the pot, as well as small potatoes, and start them boiling early because they take longer than the seafood to boil. Here is a secret Cajun trick for the best boil you will ever have. Throw that icebox of cold water away. Seafood floats to the top when finished. Quickly turn the fire off and pour a gallon or so of cold or even ice-cold water into the pot. As you do this the seafood will sink to the bottom. Let them soak for 10 to 15 minutes. This is when the seasonings all soak into the shell fish and really gets to the tastiest boiled seafood you will ever encounter. Try it! You'll like it! Mikey likes it. That ice box you are using does not have any seasoning to soak into the finished product. Richard no offense meant here. I hope you try this with any seafood you boil.
You got it down . The only thing I would add is 1/2 cup of white vinegar . Sounds odd but has no effect on the taste just the shell . Makes the meat separate so nicely especially in the knuckles . You'll notice that even the claws seem to crack easily without chipping like glass leaving tinny little fragments that sometimes get missed and end up chipping a tooth in the middle of your feast . The vinegar actually softens the shell . Makes it less brittle and less likely to smash the meat up trying to get at it . Trust me . You'll notice no change in taste just less work getting at the meat . I learned this from a old Italian crab fisherman down at pier 45 who really knew what he was talking about . He showed me the secret to making the best cippino I've ever had. It's the crab butter hidden in the top of the main carapace or head that looks all nasty inside . Not the guts but hidden behind all that there's a thin membrane that separates the funk from a creamy white layer of what looks like butter on the shell . You scrape that out with a spoon right into the pot trying not to gag on the look of it . As soon as you taste the difference you'll stop throwing it out and saving it up instead . There's always room to learn new things no matter how much you think you know about something .

When I’m cooking this many crabs...20-100 then I do the rinse off and icing for them to be able to freeze and preserve. But I do take a bunch to eat while we are cooking and also after for dinner. I have found that the Louisiana crab boils also keep the meat sweeter and less fibrous than simply using salt. Salt boiling just makes the meat dry out and tough. Lastly you don’t get to see it on video but after the majority of crabs are done then the last bit I use for soup/gumbo or cooking stock. Hope it helps. Thank you for question/comments!
As the crabs cool off, they absorb the water, so instead, why not stop cooking process and simplify things by dumping ice into pot, which would stop cooking process and allow crabs to absorb the seasoning in pot. Less mess, more flavor.
Everyone has their own way they like to eat them. I make mine in salt water only cause I want the crab taste like 🦀 with some butter on the side. And I eat them soon as they come out the pot hot I don’t want frozen crab or cold crab.🤢🤮 but like I said there’s no wrong way to eat crab it’s just the way you prefer to. 👍🏼

If you cook them in unsalted water you actually steal the salt (and some flavour) naturally in the crab out into the cooking water. if you guess wrong and over salt the water, well you get overly salted crab, which i agree completely ruins it. you're aiming to get the water salted to taste like the sea, so that the salt in the crab and the water are balanced. I too have struggled getting the ratio right. so every time I go crabbing I scoop some sea water to cook them in. then the salt ratio is always perfect (you're boiling the water anyway)

FYI the crab I eat right away is hot out of the pot. But to keep the crab frozen (which is 99% of all crab unless it’s moving has been frozen) it’s best to prep this way

Why would you do that if youre cooking a bunch of crab? You would need to reheat water for each batch. Better to just have an icebath near by like this guy.

This is a fragile way of thinking how you should eat a crab perfectly, but in the end you just ruined all the crabby flavors and seafood essence in the shells !
Not the right way at all, first of all these crabs are virtually dead and 10 minutes is not near long enough I’ve been cooking crabs and fishing them on a commercial scale for 10 years this is not how it’s done

Or else you can just take it right out and chow. I use about 10 x more seasoning than it looks. Cheers!

Jack Buster ice water can shock/blanch the fastest (other than Dry ice).

If you don't want to add seasoning then at least use beer instead of water. Beer and seafood is a perfect match
