Growing up in the north (IA), we had custard pie. It’s similar, but instead of cinnamon there’s a dash of nutmeg. You can pour it into a regular crust or there’s a recipe that you add a couple of TBSP’s of flour to wet mixture and makes its own thin crust when it bakes. It’s my favorite (with regular crust) during Thanksgiving still. My father-in-law grew up with it too in IL.

I don't know how sweet it is but I remember when you made another sweet tart your kids said that the crust could have been sweeter. Martha Stewart has two pie crusts that she uses. He recipe for a regular pie crust is called in French Pat Brisee' and a tart crust recipe which is sweeter is called Pat Sucree'. I use them both all the time and they're both really good. Both recipes are on her website. I look forward each day to see what pie you have made. We're in the middle of a move but when we get settled, I plan to make a lot of the pies that you've made this month. It's fun to see the reactions of your family to each pie. I think that you only made one that they didn't really like. That's a pretty good record!
I wonder if there is a Turtle Pie? Caramel chocolate pecan, like the candy, only pie, Turtle Pie. Cookie crust? Or tart? Oooh, chocolate caramel with a pecan cookie crust! And pecans decoration on top. Turtle Pie.
How about making some gluten free pies with gluten free crust? I've had success with crust recipes that contain sour cream and freezing the crusts that don't use sour cream for 15 minutes before baking. Gluten free can be tricky. Some advice that helped me was don't mix too long, don't bake too long, and if it's something that gets turned out of the don't cool too long.
Maybe you could do January soups. Love your videos.

I like your idea of using the back of a teaspoon to stretch and press the crust into the side of the tart pan.
