My Grandfather ran hoop nets on the Missouri River south of Kansas City and would bring in tubs of fish, many of them carp. He would clean them on a cable spool by the dozens and I watched him a lot, but I was young. My Grandmother would cook them well and we all enjoyed them. Gramdpa would peel the skin and scales off by catching it with a pair of pliers, running his thumb under the skin and ziiiiiip! Without watching the full video, but I will soon, I can say that from the ribs to the tail is just meat on both sides of the spine. The ribs can be either cut into steaks or scored deeply and packed full of the cornmeal/flour mix and fried hot in lard. The slabs of meat from the back can be cooked however you want but we would score that, too, and cook the same way. I don't hold any truck with fish snobs, and good fried fish with cornbread, mashed potatoes and gravy, and some green beans can't be beat. I love your content and watch about every episode. Wow, would have been interesting to go trapping with your grandfather and sure sounds like your grandmother knows how to put a good feed together. Glad to have you mate and glad you are enjoying the videos. I will be trying some different ways of cooking them in the future. I will have to try putting it together in a meal like your grandmother used to make one day 👍
Mate try Drifting with Gilligan he does a catch and cook with carp but only uses the belly bit no bones .Surprisingly good sized yabbies in the creek does look like a nice spot will be well worth the return trip later . Cheers Wombat 🐾👍🍻
G'day Wombat, I will have to look him up.I did do a bit of research and seen the belly meat was the only boneless meat on the carp but it tends to be the fatty cut so I thought it might have had a strong taste but I think next time I will try it. We will definitely have to try getting back up there before it cools down for sure 👍
I've had them while I was in China . Shallow fried whole . They're not a bad fish but yes a lot of bones to pick through . I'm sure you'll find a nice marinade for them

I reckon you took the wrong portion of the fillet with all the bones in it and discarded the better cuts. 🙂Mate, next time just try cutting across the fillet into 3 portions, for easy frying. Use all of it and don't discard any. You will end up with more flesh and very few bones. I honestly prefer carp to barra, any day. Every time I had barra, it tasted muddy and terrible, compared to carp, so I don't see what the fuss is all about. We leave the skin on and just flour our carp fillets and fry; a sprinkle of salt on top and at times, a few drops of lemon juice. It doesn't need any other flavour added to it. Cheers mate.....
I definitely wasn't expecting it to be any good but I will definitely be doing more carp catch and cooks in the future. I already have a few ideas on cooking methods and I think I've worked out a way to remove those bones. 👍

there is a man here where i live he used to buy carp from us and his wife canned them i would of never believed it but it was good. you are right its the clear water that makes them good good job!
If you like fish patties, then you may want to try pressure cooking and canning it. Grew up eating it this way. You don't have to worry about the bones. Think mackerel.
No, not Murry crayfish but we do have spiney crayfish up here. Basically tastes the same. I will have to make the trip south this coming winter and try the Murry crayfish 👍
I'm thinking needle nose pliers and pull them out before cooking. The bones are pretty big and I could feel them in the fillet. Definitely not like a normal fish..hahaha 👍
True , they are better when smaller. Although we kept a big one from copton one time and it was pretty good. I guess the water quality has a bit to do with it too.👍

U can’t really cut around the bones in carp the structure is nothing like ya normal fish. I rate em clean creek helps for sure popcorn carp lovely
