i love this one! My daughter made this type of recipe a few years ago and i will never forget the picture she took of how beautiful it looked ! I love these creative ways to use vegetables.
I'm a believer! I cannot believe how fast, easy and delicious this was! Even using the vegetable peeler (I don't have a spiralizer but that will QUICKLY be changing) the texture was still great, the flavors were amazing and the feeling of knowing I'm taking care of my body...PRICELESS!!!

omg this recipe is great with sun dried tomatoes made it this evening. so tasty. made it initially with carrot substitue and it was not that good in the blender.
Quick question. Should you put the zuccini in a colander to drain any water? would that help? going now to try and find a spiral slicer! i love it!! Thanks for the video Also, can u do the same with eggplant?

This is an old video so I'm not sure if you will see this but what if you have an oil free diet? What would you recommend? Maybe use avocado instead? Thank you

No point to make sauce from scratch. Just buy passata, its cheap and ready, organic without added ingredients, and the thickness makes a perfect raw sauce.
I don't really enjoy the taste of raw eggplant, I think zucchini works best. Draining it doesn't really work either--the zucchini doesn't actually become watery until you mix it with the sauce. The best solution is making the sauce really thick and not tossing it until you are ready to serve it.
Too much fat. Just because it's raw doesn't make it any healthier than the cooked alternative. Way too much olive oil. High carb, low fat is were it's at.

@Bourne2bwild1989 Extra virgin olive oil is, by definition, raw. It's only ground with stones, not heated.

Carbs are good for you. They should be your main source of calories.
Is that cold-pressed olive oil? Otherwise this is not 100% raw.
