I recently made Chicken Curry from one of your shorts plus fried rice dishes and Chow Mein recipes. I still do like to support my local Chinese restaurants but with the cost of living crises here in the UK and take-aways getting so expensive, they have become a monthly treat these days. At least I can make good food at home copying your recipes.

Also thank you for the interesting tip with frying using cornflour or cornstarch over wheat flour. It is so appreciated you sharing your experience and knowledge.

Our takeaway is street food, we stopped Chinese takeaway in 2022 as we couldn’t do this and run 2 places at the same time and our street food has come in the top 3 in the uk 2 years in a row so we closed the takeaway

Shouldn’t be chewy if you cut across the grain, it’s almost impossible for it to be chewy if you did that, if you cut with the grain as we say in this video, it’s chewy
An easy way to cover meat with flour is to put all the ingredients in a plastic bag and give it a shake. It's very quick. You can squeeze/shake the meat as you remove it from the bag. It also means it's one less thing to wash up.

Plain boiled rice? - yes it has a flavour of its own and allows the chicken and other ingredients to stand out? we all think plain boiled white rice is boring but I know think it has its place on many dishes to give contrast? I'm sounding like a rice nerd!
I do make the sauces and other ingredients fresh, apart from the chicken itself. I've found a brand of coated chicken strips that I just can't beat at home, so as a saddo single I take the easy way. Great video as always guys. 👊👍 Ps, I use kashmiri chilli powder instead of the food colouring for things like this, it is really bright red.
Great vid! I notice that you sell the elusive 'creamed corn' in your online shop. Do you only use this for soup? I ask as I've had a few cans for a while now and experimented with it over shallow fried fish battered in cornstarch, and it was fantatic! I've never seen it in a restaurant, so don't really have any comparison to improve what I did - have you got any plans on creamed corn main dish videos?
It’s been scientifically proven to be fully psychosomatic, however doesn’t make it any less real for you, and no there is no alternative, it’s also found in larger quantities than added to food in tomato, cheese, aged meats, most green veg, mushrooms, oily fish and the list goes on, so if it were actually msg, you’d have the same symptoms when you at most foods
maillard reaction - a chemical reaction between amino acids and reducing sugars to create melanoidins, the compounds that give browned food its distinctive flavor. MSG helps speed this process up as glutamate is amino acid, when causes the browning to accelerate as its self browns, its basic chemistry

Crispy chicken and chilli sauce is my fave!!! Makes me wonder now if why sometimes the chicken isn't great is down to the flour.
