You have done a lovely job, one day I'd like a van like this, have you ever thought of mirroring the build so the cabinets and side access is on the drivers side? You could then swivel the drivers seat, fold the passenger seat flat and use as a coffee table - or fit a removable cabinet over the folded passenger seat for more storage when camping - just a thought.

Nice build but the wide kitchen cabinet seriously narrows the bed space. In my mind only the Japanese have the design solutions for small space campers. In the UK we seem to focus on cabinets when the bed is the most important part of a camper. A fold up/pull out sink and hob and underslung decent water tank would provide a nice wide bed. The small 5-10 litre water bottle in a cupboard is all but useless. We know this from experience having owned several small campers.
You'd have slightly more space in an eNV200 because you wouldn't need your electrical system inside the cabin of the van, you can just use the vehicle battery. A lot of van elements can be made simpler in an electric, too, like induction cooking instead of gas and being able to use the vehicle heater/AC. The power draw on the car battery is negligible compared to the power it takes to move the vehicle.
