1960's Full-Meal Casserole With Salad

  • This is a rich casserole which makes 4 servings.
    Here are the ingredients:
    Combine in sauce pan
    1/4 cup butter
    1/4 all-purpose flour
    2 cups milk, I used 2/3 cup non-fat dry milk, water to make 2 cups
    Cook to thicken
    In separate bowl mix:
    1 - 12 ounce can of Bumble Bee Albacroe White Chunk Tuna
    Juice of 1/2 lemon
    1/2 cup ground celery, about 3 stalks
    3/4 cup frozen green peas
    1 - 2 ounce jar of Dromedary diced pimentos, drained
    2 cups French bread crumbs, toasted
    1 cup shredded sharp cheddar cheese
    Add white sauce to above mixture
    Turn into greased oven proof dish
    Top with 2 ounces of sliced almonds, toasted with 2 pats of butter
    Bake in preheated oven at 350 degrees for 30 minutes
    Beet salad dressing:
    2 tablespoons sugar
    1 heaping tablespoon cornstarch
    1 cup Tropicana orange juice
    Cook to thicken
    Add 1 add one can of sliced beets, drained and sliced smaller
    Allow to cool, I placed in refrigerator until cooled
    Serve as a salad dressing over baby spinach
