Na they don’t, I have seen them knocking my cards around, and the cards stack on top of each other, ink would have rubbed off. Also stake is the biggest in the world, they won’t risk loosing that cash cow. Even tho evolution isn’t part of stake, they are used by roobet and stake.

I struggled with remembering the 2-3 hit thing. it helped me to just remember it as you hit 12's against anything but 4-5-6 bust cards.
I have a friend who worked for Fanduel live casino as a black jack dealer before.(both fanduel and Stake uses the same Evolution system so the concept are the same). So how it work is, the dealer knows as much as player does. Nothing more. In the normal hand (no black jack), they deal the card, wait for all players making decision on the table. After all players made the decision, then they need to scan the facedown card again (that's when we see the dealer slide the facedown card onto the scanner again before flip it over) for dealers to know what card they have and for system to reflect that card onto your screen.
For the hand with dealer has Ace on the top, after finished dealing, dealers do not know if they have black jack. Players need to make the decision on insurance, and after that, if the dealer has black jack, the screen they are looking at will show a green light to notice them to re-scan the facedown card and flip it over right away. If the dealer does not have black jack, the screen will just tell them to deal cards to players. All of that happen after players made the decision on the insurance.
And for those platform that has "infinite blackjack", Ace on top blackjack will work the same, but for the hand with hidden black jack, the system will tell the dealer to flip it right away after dealing initial 2 cards to players.

Pretty sure they know what they have. They have to swipe the card as it comes out to the table. It will show on their screen what they hold.

Try 'Sharpen' or the 'Unsharp Mask' on the Effects tab if you use Premiere Pro. that could maybe fix it a little bit if you dont overdo it.

They know if they have blackjack there is a screen in front of them and when they scan the card they can see the cards pop up on their little screen
