Actually the mirchi is washed and packed in the cover. If you guys see the end of the mirchi is having a cut. Same goes with the Coriander and onions. All the prep is done in the home like washing peeling and later are transferred. Please don't tell that how can they be like that. As they are cooking , they do have minimum common sense like washing the vegetables before use. As they don't have easy access to water at the stall they do the pre washing before and use cloth to clean hands. When I am cooking at home I do use cloth rather that wasting water, maybe the person can use multiple cloths and also need to handle money and food properly. Maybe if any of you are at the stall and notice , you can tell them in a kind way
After the mirchi bajji is chopped..they have to deep fry again to get little more crispy and later add red chilli powder, chopped onions few add deep fried peanuts, chat masala, lemon juice and serve. Originally from Ananthapur, AP.
The Street food was great and I too felt like eating this spicy mirchi bajji , but that person is not maintained any hygeine steps , first green chilli were not washed and coriander leaves were too not washed , he is not using hand gloves , .... I recommend all who love Street food first see the safety of your health with clean and tidy street food...
Only complaint .. Not using utensil to mix (a big spoon) directly hand. Aah. Coriender need to be washed. Unwashed chillies are ok as the bacteria dies while frying.

I'd suggest you to try Bajji mixture too. You'll be blown away. Though the process is similar, looks similar but few other ingredients are also added to it.
Having spend over four decades traveling across India I have a very simple and generic observation.... Street food vendors are on a comparative note the most hygienic in the Southern states, followed by Western States and the least hygienic in Northern India. So I can say for sure that all ingredients would have been pre washed before use since the vendor is from Telengana. Quality of food and the price paid for it the best value for money is always South.
Well railway stations, bus stands etc vendor's operate from that mindset. This guy must have a good reputation and that's why someone would go and make a video on him.
He was trying to be clean just because the Camera was on. Otherwise he would have been as dirty as any other vendor. Moreover, his cutting desk was as dirty as others. Onions and tomatoes and dirt spilt over the desk.
No matter how tasty and attractive it looks it can never beat home made food, cleanliness and love above all.
