Thanks for giving me the idea of using that round serving platter as a oven proof pan. If you line that round serving platter with parchment it would be easy clean up after the meat kefta is baked. A Great meat and potato dish. i love using my oven vs my stove top because i have a white gas stove and cook once and you have to take off the iron and wipe clean the splatter.

I making this today I used red onion along with green onion and diced yellow with the potatoes. I only had red cherry tomatoes on hand used those with a red bell pepper I needed to use up. I noticed my tahini turned white like yours from the lemon juice maybe and garlic and water. Now I will just pop it in the oven tonight. I love the one pan meal idea.
Yes great idea for a filling! Only thing is the outside part needs something to bind with the bulgur wheat to hold their shape other than meat...maybe pureed lentils will work!

just did the same but my version was fried the potatoes slices, fry the meat and then layer the potato on base then meat then put the tahini sauce more watery to let is absorb the potato in the oven for 15 min 350 F, am Iraqi married to Palestinian so collaboration is nice, love your energy

My favorite dish. My mom sometimes makes it like this (bil sun'niya) but more often in a pot full of sauce. Sometimes with tahini and sometimes in a tomato sauce. I would always ask her to make it both ways for my birthday. I have a question. Do you ever put sumac in your kefta? I find myself doing that but I think I picked it up from the Persians.
My Palestinian roommate used to cook it for us in college and I loved it. Exactly that same feeling, warm and hearty. BTW, where can we buy this wonderful tray again?

Hi Blanche, nice recipe! A totally different take on Kofte' (as how we say it in Pakistan). Our kofte' are more inspired by the Khaleeji arabian recipe. Nevertheless I will try this Palestinian recipe as well!

But I do have a question. So the last 5 or 10 minutes before it’s done, you put the sauce on and then put it back in the oven for the last 5 or 10 minutes? Or is it done at that point? Your video shows you putting the sauce but cuts to you serving it to your mom. TIA

Hello! You can do it two ways. You can put the tray back in the oven and bake for 10 minutes after the tahini sauce, or you can eat it without baking it more. It is really a matter of preference. Hope you enjoy the recipe!

Hi I really enjoy your channel I am also Palestinian I love your cooking it looks great but I realize there are different methods of cooking every Palestinian cokes different. I was a little confused when you made the dish asked to you not cooking the tahini sauce when you poured it on the meat you did not put it back in the oven. My mom always cooked it and then added the tahini sauce at the end and put it back in the oven to warm it up
Yes for sure, there are so many ways to cook the same dish even from the same region. When we taped this show, we had a lot of recipes to cover, so to save time (as we were running late) we did not cook the tahini sauce, and we actually loved it! You can cook it with the sauce if you have more time, or skip this step if you don't have time. Either way I think it tastes great.

I would use cashew butter--or any kind of unsweetened nut or seed butter that she can hopefully tolerate.

You don’t bake it with tahini that is how we do it ? What fat percentage you use ?
Actually bake it with tahini only the last 10 minutes. For the beef we used 95% lean, but for a more juicy result use 80/20
