  • Today, I'm sharing my mum's Magaj (Magas) Recipe with you all. It's the best Magaj recipe I know!!
    I remember that, as a teenager, I would not eat this dish. But as I grow older, I crave the dishes that my mother used to make, and I am lucky to still have her around, so she can show me how to make these items! So please enjoy this delicious sweet that we share with you!

    INGREDIENTS
    300g / 2 Cups Magaj Flour (Coarse Chickpea Flour)
    200g / 1 Cup Granulated Sugar
    250g / 1 Cup Ghee
    100g / 1 Cup Milk Powder
    1/2 tsp Cardomom Powder
    2-3 tsp Shaved Pistachios
    2-3 tsp Shaved Almonds

    Wow! Looks mouth watering!😋 I never realised until now that it is that easy to make, one of the best Indian wedding time sweet. I think the credit goes to you how you showed us the whole process step by step. Can you please give the measurements not only in grams but also in cups, that way I find much more easier to follow.       @@MilhaanHome thank you so much for taking my suggestion on board. In india when you go to grocery shop, they always weigh in grms and give you exact quantity but here we don’t have that system and i do have weighing scale but I’ve never used it in my life.😀

    Also I wanted to ask , if you add sugar while it's hot would it not leave water & make chashni?
    I only know use of ground caster sugar once mixture is cool down.

      Yes it would. But this is what you want to do so that the sugar melts. Barfi has chasni in it too and it comes out great!

    Hi love your recipes was wondering the sauce pan using for this recipe what brand is it as looking to purchase locally in the UK. Thank for sharing

      Thank you Anju! The pan I used is Calphalon brand 3.5qt stainless steel. I bought my pans in the USA, but I believe they are sold in Fenwick & the like. I looked online, but couldn't find a good match. A heavy bottomed, stainless steel pan with a glass lid (so you can see inside) works well. I hope that helps!

    Thanks for the recipe. I do not like milk. What can I use instead of the milk powder please?

      I highly recommend trying the milk powder in this recipe, as you really can't taste the milk.
      But if you really don't want to use it, you can just substitute more chickpea flour for the milk powder. I haven't tried it this way myself, but know that some recipes omit the milk powder all together. Let me know how it goes!

    How many hrs did you leave it to set,please
    And can I grind chickpeas to get the flour??

      The time it takes to set depends on how warm it is where you live. You can put it in the fridge to harden a bit if needed but you just need it set so that it’s firm enough to cut.
      As for grinding chickpeas, I’ve never tried it. I’d recommend finding magaz flour at your local Indian shop 😊

    I made this magaj today and its cooling atm looks yummy though thanks for sharing this recipe
    I cut magaj today and its fragile and crumbles where did I go wrong

      The Magaj is definitely more crumbly than Mohanthal. But if yours is too crumbly, you may not have add enough ghee or didn't let it set for long enough. The amount of ghee depends on the flour - the older it is, the more ghee you will need. You could try to fix it by melting the mix again on a low heat and adding some more ghee to it. Then let it set for a good couple of hours in a cool place. Hope that helps!

      No, as it is too fine and smooth. The texture won't be right. It's best to wait until you can get the magaz flour. Sorry!!

    Could adjust this for a diabetic and put less sugar/ghee. How much less do you think you could get away with? Thanks :-)

      Not sure you could get away with putting less ghee. You could try doing 50% sugar and 50% sweetener to start with. I wouldn't change 2 things at the same time, otherwise you won't know what works and what doesn't. I hope that makes sense.

    I can't get magas flour. What should I do? Same as mohan thal? Add ghee and milk to flour and make grains.

      Great question! Besan flour is fine chickpea flour whereas magaz/magaj flour is slightly coarse chickpea flour. 😊

    is the coarse Magaj flour the same as Besan flour ?

      This is a great question! The answer is No. Coarse chickpea flour is actually called Magaj/Magaz flour. It is available in Indian shops. I hope that helps 😊

    Is magaj the same as magas? I have never heard of it referred to as magaj. I thought magaj was brains.🤯

      Actually the texture is quite different. This is smoother whereas Mohanthal is more grainy. Both are delicious 😊
