CANDIED LIME SLICES - มะนาวเชื่อม มะนาวกระจก แปรรูปมะนาว

This Candied Lime is very easy to make and they are great for a lovely treat and garnish on drinks and baked stuff.
This recipe will work for lemon and citrus as well. You have the options to add food color or baking them after but of course, you can simply skip those step ;)

INGREDIENTS:
Limes (6-8 depending on sizes)
150g Sugar
150 ml of Water
Salt (to soak and wash)
Food color (optional)
INSTRUCTIONS:
PART 1: WASH AND GET RID OF BITTER TASTE
Wash limes with salt
Slice them into thin rounds
Soak them with a lot of salt and give them a quick wash with water drain them out and repeat 2-3 times of this step. (this will help get rid of the bitter taste of lime skin)
Boil water on medium-low and add lime slices let it boil 3-5 minutes and drain out water. Repeat the process of boiling 2-3 times (this will help get rid of the bitter taste of lime skin)
PART 2: SYRUP
Boil sugar and water until dissolved bring it to simmer
Add lime slices
Stirring occasionally
Simmer for about 30-40 minutes until syrup thickens, rinds are translucent
Transfer to a non-stick baking sheet
Let cool completely
Transfer to a container
Enjoy!
OPTIONAL

Bake on a low heat 100°C or 212°F until it all dry
