Non-musician here. Just so I don't misunderstand, is that guy drumming along to a song he's NEVER HEARD BEFORE?

It's not that hard with drums since you only need to match the tempo of a song and not the keys. Also with drums pretty much any kind of drum beat works with any song. Sure "boots and cats" would not sound good on this but it would work. The parts where he changes the beat with the song are a result of listening to enough music to understand that most songs have the same structure so he kind of predicts what is going to happen next.
