Sara, as a Canadian who has travelled to the U.S. over the years, I had come to LOVE anything made with cornmeal, and of course cornbread. For some reason, many of my fellow countrymen do not know how delicious corn fritters are. In fact, many years ago, a frozen Cornmeal Waffle product was available , but discontinued due to lack of sales. I believe I was of the sole customers! Your recipe is something I am going to try for sure! Please keep sharing your culinary skills!
These look so yummy! This reminds me of my granny’s hush puppies. She would always add corn and green onion and would fry up the biggest hush puppies. Then we would make a rotel velveeta cheese dip for them. I would just eat those for dinner! Around here in south Mississippi all of our catfish houses serve cheese dip with hush puppies. Nothing beats Granny’s tho!

I would line a sheet pan with parchment paper and put the scoops on that and tray freeze them. Once frozen, store the balls in a zip lock bag. Then, I bet you could either deep fry, or air fry them from frozen. I will definitely be trying these. I just love corn fritters!

Me too! I already had IBS, I had my gallbladder removed and now I cannot touch gluten and fats. Positive celiac. I have to eat mainly fruits and cooked vegetables, no oil. My system likes juicing and smoothies more than anything. I’m not glad you have the same, I’m just glad to find I’m not alone. I honestly envy all these mukbang and cooking channels. I’d like to be able to eat “normal”.

Totally gonna make these just like you did Sara! I love a bit of onion and pepper with my corn bread so I bet it’s awesome! I made these but thicker and more drop patty style in a shallow skillet with fresh corn, and jiffy mix- my son said it was delicious and like summertime mini corn casserole cakes.
