Love your video! One thing, you mention any bottled vinegar will do. Bottled vinegar is normally 5% acidity. Unfortunately, in the last year, some vinegars are being sold in 4% acidity bottles which does not meet safe water bath acidity standards to prevent the growth of botulism. Just want people to beware. Thank you again for your videos. You do such a great job!
It's not new for vinegar to come in 4% acidity. It's just that people started freaking out about it recently for some reason.
All you have to do is change your water to vinegar ratio.

I just learned a tip to preserve the green colour when canning green beans. Add 50 to 100 mg of a zinc supplement to each jar depending if using pints or quarts.Doesn't change the flavour but the beans stay that beautiful emerald green. From Homesteading with the Zimmermanns.

There is a problem for some that zinc collects in your eyes and macular degeneration could be caused by using zinc. I had a boss who’s dr told him not to use coldeze and such because of zinc
If 50 or 100 mg of zinc is considered a safe single and presumably daily dose, then a tablet in a full jar of an item which is not likely to be eaten daily is probably OK- EXCEPT when you are elsewise getting quantities of zinc in foods, supplements, and/ or OTC's.
I use just 30 mg, and it woks great!

We love dilly beans. I too do jars of the short beans but I add crushed red pepper to those jars for spicy dilly beans! They are so good!!!

I love making dilly beans. When I used to drink occasionally, I loved these in a Bloody Mary. Now they are just good snacks. ❤❤❤
My favorite meal out of the garden is green beans and bacon 🥓 and potatoes 🥔 it’s been a tradition for a long time my grandparents and mom and now me 👌
Kevin and Sarah can't eat potatoes due to their keto diet but I love that recipe too!!
@@mindycollier9087 one potato 🥔 is not going to make you lose the race for keto you should not stay in ketosis for long periods of time you should break the ketosis at least once a month or you could have serious side effects like keto rash, keto flu there is way more than just restricting your food and carbs and fasting if your truly fat adapted then it will not effect you
@@growermo940I'm not very knowledgeable on the keto diet or the long-term effects on your body but Kevin and Sarah do occasionally have cheat days and maybe they do eat that on those occasions!!
One more comment, they are truly a act of love, very time consuming stacking beans in jars but well worth it

Another yummy thing to do with green beans is ‘Asian green beans’. I made them in 1/2 pint jars using yard-long beans. Took the trouble to spiral them in the jar. (With the short pieces filling in the middle.) delicious and beautiful for gifting.
You should try fermenting them to see if you like it.
Lots of really good probiotics, and yummy.
I could never get tired of green beans and love them in any preparation, but dilly beans are special. Thanks for another good video.

I haven't made dilly beans in so many years! I forget what they taste like. My purple bush beans are almost ready and I'm excited :)
I Love Dilly Beans and specifically choose varieties of bean to be round & straight just so that they can be Dilly Beans. Emerite is my current favorite, but it is a pole bean. I also pick the beans when they are young, thin and the right length to fit in the jar without cutting/snapping. Cannot wait to have enough to make some or just lightly steamed and buttered. Yum!
We put cut side down & snap what wasn't long enough for regular green beans. Same with carrots, cut to length & short ones get diced for regular carrots. ❤
Last year I thought the Lemon Garlic beans were going to be my favorite bean canning recipe, but I was wrong. Dilly beans are definitely the best! But I like mine spicier than Rachel's with red pepper. 💚

I use that same recipe for y dilly beans ….only i add a 1/4 tsp red pepper flakes to each pint to give them a little kick. Spicy dilly beans are a fave snack in our house.
Tons of uses for extra green beans!! I've never heard of dilly beans but that recipe looks good!! In the winter some of those canned beans could be chilled and by adding stevia or any sugar free sweetener you would have a keto friendly bean salad!!

I love dilly beans. I use dill seed, dried minced garlic and a bit of crushed red pepper in the jar, instead of fresh dill and garlic. I like your hint of using vinegar in the processing water.

These are my absolute favorite snacks! I used to sit in my mother-in-law’s foyer sitting on the floor eating a whole jar, waiting for my husband to say his final good byes….lol we live in MN so our goodbyes take about an hr….lol i am definitely going to try these…I did not get the recipe in the divorce….very sad
I can some green beans with different spice blends i have. They are really good. And give your green beans different tastes. Also i love to can french green beans. I have a frencher. I also canned sweet and sour green beans.
I use equal parts of vinegar but instead of water I use the bean juice that I have blanched my beans with and salt as well
For 50 plus years I’ve been doing dilly beans, the same process that you use except I add 1/4 tsp. Of pepper flakes . Yummy, my family devour them
Love your video. Hoping to be able to make some of these this year. Switched over to raise beds this year also. We received a Deer this year that seems to like my bean and not sure if it will leave them alone so I can get some !
We love Dilly Beans! Some with spice, some not. They are delicious!
A couple of fine points...
When water bath canning, the jars should either be boiled first or heated in an oven. This is not necessary when using a pressure canner. I know you are using vinegar so they can be water bathed, but those jars should still be heated first to be absolutely safe. The lids should also be put into hot water, just off boil.
Another tip to increase success rates for sealing is to re-spring the rings. Simply slide your thumb around the inside of the rings with slight pressure to move the inner part back to where it is supposed to be before jarring. Every time you use a ring, the inner part moves out, essentially making it so there is no spring tension unless the inner part is re-sprung. Even new rings that are on new jars need this to be done because the factory over-tightens them. New rings from a box of only rings should be fine.
When canning, go hot to hot or cold to cold. Otherwise, cracked glass could happen. If putting hot liquid in a jar, make sure the jar is pre-warmed. If putting jars filled with hot liquid into cold water in the water bath or canner, they could break. Get the water boiling first. I always have my water bath canner boiling before putting my jars in. It saves a ton of time. Your brine was hot, so your canner water can be boiling. What works great for me is to have the jars in the oven at 220 degrees for 20 minutes. I then turn the oven off. When I need a jar I take out a hot one and fill it with hot ingredients, like jam, brine, filling, etc.
We need to do our first picking of beans tomorrow so we will try out this recipe!

Picked a gallon and a half of beans in a week. Hope a pound of bean seed gets me a lot more. Next year got a 5 pound bag of seed already. Getting seeds on sale now. Will be saving seed now. Aiming 1 and 2 years of things that are reliable producers.

We love green beans! Our favorite way to eat them is canned with baby potatoes. Put a bit of southern hot sauce on them and they are the best!

Not hard to grow, just follow package directions for growing. I prefer the Fernley dill as it is more versatile than the tall ones. I dry the fronds to use in cooking.
Fern leaf dill. spell check can be a pain.

I love green beans. But I never use a knife to cut them. My grandmas always taught me to snap them by hand. I’d sit on the back porch with them for hours snapping green beans for preserving.

I think you forgot to mention putting dill into your jars, and if you put a piece of garlic cove in each jar, that makes them even yummier.
We have so many bean already canned so this year the only reason why we even planted green beans was to make dilly beans. 😂😂😂 we would rather eat them that way anyways. ❤
Two days ago I found out what dilly beans were. I'm definitely not a fan of green beans in any way. I don't mind them fresh and raw off the plant, but other than that, I think the only other way I would eat them is this way. Every time I saw a post about dilly beans, I avoided reading it. I though it was green beans with spices in it. Of course, there's always the chance I would make these and despise them as much as I do green beans.

Having watched you guys for many years, as well as other channels with canning tutorials I have a QUICK QUESTION. How often would you say you have a failed seal or even a spill over in the canning water, OR have a jar break? I think you are definitely one of the best at canning and safety of it. It’s a simple process BUT I hate to stuff the long beans into the jars. Last years I broke the beans into
1 1/2” pieces and canned into quart jars like you would regular beans. It’s much easier to do.

I love green beans in all shapes and flavors, and I'd love to try these, but I don't want to can them for storage. If I just want to make a quart to keep in the refrigerator, do you think I should blanch or boil the beans first before putting them in a jar with the vinegar/water/salt brine so that they have the same texture of canned beans?

God bless you and I hope I hope Kevin's son dad is doing better I'm praying this is Moana this is m o n a I'm 68 years old and shut in in clintonville Wisconsin and apartment but I love you all my dad came from farming people he had a victory garden in his home in Marion Ohio when I grew up and he grew all kinds of things in the city you wouldn't imagine it was beautiful he'd even grow watermelon in marshmallon and which is cantaloupe and he would grow the tomatoes and he would have his tomatoes with the salt and pepper shaker out there in his back pocket mom always made sure it was there and the only way I like green beans is fresh from the garden straight to the pot or can now we didn't have jelly beans mom didn't pick on but she would can him she would can the green beans fresh from the garden so I know what that tastes like and I can't eat store-bought green beans I can't stand them but I love the fresh and the best is fresh from the garden and you just wash them and then you fix them but the fresh can there as well as good as well I'm praying for you all God bless you all pray for my son Abraham Lincoln I didn't say Lincoln I said Abraham Aaron Lawhorn that's my son's name he's in Houston Texas and my daughter Angel Joy Clark they are they don't know where each other is in Houston but it was a hurricane and a tornado and a million plus people have their lights off so please pray and he's on the street it's a long story but pray for him I love you all in the name of Jesus yeshua thank you amen 🌹🌹🌹
