    To blend the garlic, ginger and soy-sauce before is the most brilliant idea! As I don't need to get finished in 5 Min, I cook in your stock base some vegs and the mushrooms first for a couple of minutes (leak, celerie etc) then I cut down the fire and add the miso, grated carrots and the spring onions to have a nice bite! Wonderful! Thank you so so so much! Love from Belgium

    Yes--traditionally the miso is added at the end with the heat turned off--to preserve the good enzymes/probiotics 😋

      Indeed, there's probably few probiotic left in there when you make it like them! Although they said they didn't reach boiling but still beyond 60 degrees is enough to make the bacteria die...

      It's also to preserve the taste. Miso flavor fades when boiled. That's why Japanese never boil miso soup.

    I love your unorthodox approach; the blended tamari ginger etc. was wicked. My ex lived in Kyoto for several years; we'd been best friends for years after and he passed away suddenly last year so I've been madly chasing down traditionally created miso aged 3 yrs etc. -- it turned out it was all in the Asian market around the corner from where I live so meant to be. For whichever one of you is the tamari addict, there is miso with reduced sodium to balance all that out: Michael Gregor seems to have found a study showing that the effects of soy counteract the salt necessary in the fermentation process but has doubts about Kimchi. He's one of my heroes, but despite his treadmill, all heroes at one point have feet of clay so kimchi is still on my menu. Tx guys!

    guys, didn't have a hang over but did make the mistake of eating nachos at a Mexican restaurant with the wife that had way to much greasy cheese! thought i was going to loose it before we got home. whipped up this MISO SOUP with white miso and settled the belly right down. This is a great simple and comforting soup! thanks for the video!

    Hey Dave and Steve.. you two make a great team..and Soup is a bonus. I've never made Miso soup at home but I order it everytime its on a menu..this recipe is on my to try list :)

    Mushroom as an alternative to tofu is a great idea!!!! Green beans surprisingly goes well with miso soup too!!!

    The veggies are suppost ro be added in as big pieces so you can grap them with the chopsticks and also in japan they always add tofu

    Great recipe to get over a cold as well. But for the garlic and the ginger I would use twice as less next time otherwise it's too spicy 😂 I was crying and sniffing the all meal 👍🏾👏🏾

    I like to add a few drops of sesame oil. Toasted sesame oil and some toasted sesame seeds on top.

      You can do it. Nobody can force you to eat something you don't want to eat. For me, information is key ´for motivation, so I recommend checking out all the amazing youtube activists and documentaries out there :)

      Hey Gavin, so we have run a health food store and restraint for the last 15 years. We’re fortunate enough to get our ingredients that way. Asian supermarkets have an even better selection though. Better than we could ever stock, haha.

    I didn't know about not to boil it. I have to try a true miso in time. Last one was something between normal soup on chicken but with soy sauce and chanterelle instead of japanese/chinese mushrooms, but also with garlic in it. It tasted really "japaneesy" eaten with rice. Bust I suppose miso is better xD

    The scallions I buy in the UK from both Tesco and ASDA have mud and other dirty looking stuff inside the hollow green parts of them. So I end up cutting the hollow parts off and only using the solid, mostly white part of the scallions. I've never seen a chef do that though, so do they (if Dave & Steve are reading this, do you) have a way of cleaning the inside of the scallions? Or do you just not care? Or are your scallions clean from the shop? I'd like to be able to use the whole scallion, green and white parts, but I need to know about the dirt before I do. Thanks.

      Yeah you can clean a scallion the same way you clean a leek. Just look it up on youtube how to do it. There's often residual dirt in the scallions

    I bought miso paste on a whim, don't know what I bought it for, but what can I use it for, what are all all the variety of ideas you can use it for? Can you Saute veges in it? Smear it on toast etc etc?????? Does it need to be cooked? If I were to put it in pasta sauce should I brown it first before the sauce goes in or what? Anyone?

      In the super market you can find miso in the vegetarian vegan section with tofu. Or in the international aisle with the Asian food

    I'm confused... Probiotic-rich foods like miso can't be good for digestion after cooking can it? The probiotic bacteria would be killed off by the cooking process. Otherwise this sounds super tasty 😂

      Not exactly cooked for long though, and was mentioned that they don't boil it so maybe the bacteria's still around.

      Hi. A Probiotic is substance which stimulates the growth of microorganisms, especially those with beneficial properties (such as those of the intestinal flora). The probiotic is not the bacteria. So cooking it is ok ;)

      You're confusing it with Prebiotic. Probiotics are "host-beneficial" bacteria

      If you gently heat up the miso soup it'll still contain the probiotic organisms, but the moment it comes in contact with high heat and begins to boil, you destroy them. If you are worried, that the probiotics will be destroyed, you can make miso dressing for salads which don't require the heating up of the miso, you can put miso on corn instead of butter, etc, etc... or go for other probiotic rich foods such as yogurt, kefir, pickles, sauerkraut, or any lacto-fermented foods.

    Being born and raised on the southern coast of Maine in Portland which tells you what's a Porsche and on the sea. Wakame seaweed is the best for miso soup. Break it up small.     And you just killed all of the health benefits of miso by cooking it. Miso is added at the end,not cooked but warmed through to preserve all the probiotic. Also very little of the taste is left when boiled... Shame. Waste of good miso.

    The components of this soup are not cheap for someone, like myself, living on minimum wage. I don't have a Whole Foods or Trader Joe's close to me. Is there someone, anyone out there, who could tweak the Macrobiotic diet so that poor people like me could also be healthy.
