You can still clear most of the content, it will just be more challenging since she’s been power crept which is never a bad thing. I will be pulling for her tho!
People always have mixed opinions. I say she's as good as the amount of investment you put in her. My Anton team just did 35k in against typhoon this deadly assault. Truth is, Miyabi is an outlier because she's a void hunter, but all the characters up to this point are fairly close to each other in damage output. If you like Ellen, pull for her. She is still very strong.
On pc just have Zhu yuan ex special or do her three shot enhanced BA and swap to Nicole using the swap to back character key bind (go to your settings and look for it. Mine is set to left shift) On mobile there’s a setting that allows you to swap to back character by swiping left. Iirc it’s in input but you may have to look around for it.

She is still really good with this double stun team so if you have the team or plsn on investing in it then just go for her if you like her
