That is one of my favorite sandwiches! Be aware that there are Reuben sandwiches and Rachel sandwiches. Reubens have corned beef, sauerkraut, Swiss cheese and Russian Dressing. Rachels have pastrami, coleslaw, Swiss cheese, and Russian dressing. Both use rye bread. Another "classic" American sandwich you might like to try is a Hot Brown: bread, sliced turkey, bechamel cheese sauce, bacon.
Reubens are pretty good but you know those types of food where people say you'll either love it or hate it? Reubens are a type of food where you'll either somewhat like it or somewhat not like it.

I do not laugh when you say that's lovely. I always say food is beautiful. I have a close personal relationship with food and yes it can be lovely and beautiful. Mrs. H did it the correct way. She made her own corned beef and that is the best way to do this. She did a wonderful job and the Sandwich looked Beautiful. Now I'm hungry for one. I would definitely eat what she made. @@pjschmid2251 most grocery stores around st paddys day actually do offer packages of "make your own corned beef" which is just a brisket flat and a spice package. Apparently in the UK they use the rump or the topside. i forgot that I actually did make it earlier in the year for the firs ttime ever but they make it very easy with having everything included. takes a few hours but its worth it.
She absolutely crushed that corned beef, and only 6 days too. I have never made corned beef before 30 days, but that looked incredible. I'll never understand how the Reuben is not a more popular sandwich everywhere. Always a treat watching a first-timer get the flavors of that
Oh my gosh! SO impressed that you made your own corned beef! In US we just buy it at the deli counter at the grocery store. I love Mrs H's spirit! Julia Child said to approach cooking with NO FEAR! And that's what Mrs H does!!
I'm in US ohio in march the grocery store has Corn beef that you can cook youself with other beef cuts . it comes in a pack that has the brine in it spice pack. The deli sliced is about $ 8- $13 a pound depinding in brand you get . Where you can get 2 1/2 lb. Pack to make you self for $ 10 so I just get 2 packs cook them slice and freeze to have in the winter. 2 pack a week gives me little under 4 1/2 lb. cooked . So I use 1 lb. freeze 3 1/2 ever week of march gives me 13 lb. for winter sandwiches. cheaper too to make your self.
Yeah, this Amercan also cooks the corned beef himself but doesn’t corn it himself. Grocery stores usually have corned briskets on sale in March because “corned beef and cabbage” is supposedly a St. Patrick’s Day thing but they should have a few of them available any time of year and they are easy to cook, either simmered in a pot or done in a slow cooker.
One store in my area has corned beef year round in their meat department. If you just buy a brisket cut you can make corned beef, brisket or pastrami. Only difference is in the seasoning really.
@@samuelhowie4543 Actually, I've noticed on the West Coast that getting corned briskets can be easier than getting raw brisket, the cut that corned beef, pastrami and "regular" boiled dinners and/or brisket are made from. As I've said elsewhere, I suspect the large meat packers preferentially send the briskets to Texas and East Coast cities with large Jewish populations.
The magic of the Rueben sandwich is having that many strong flavors to balance each other out. Swiss cheese, and sauerkraut are flavors that can dominate a sandwich, but both together along with a sweet picky dressing and flavor packed meat is surprisingly balanced. Even the bread needs to have a louder that average flavor so it doesn't get lost. I think a lot of people are skeptical of all those pungent flavors before trying it, but a good Rueben definitely rewards the adventurous.
You have the sweet from the dressing, the sour from the cabbage, the salty from the corned beef, the bitter from the rye bread, and the creamy from the cheese. The only thing you don't get isxspixy.

Reuben sandwiches are really good. Impressive you brined your own beef! If you put a lid on your pan for a minute or so, your cheese will be all melty and delicious by the time you pull the sandwich out.
Wow. I had no idea you can't buy the same kind of corned beef there. I would never even think to try making it. Brave of you. We actually prefer pastrami on ours anyway though.
Pretty much the only difference between Russian and thousand island is that Russian dress sing is spicy, with Horseradish and Chili pepper, while Thousand Island is sweeter, using a sweet relish typically.

I'm from south-central Texas and make Reubens often ... I use the already brined brisket from the store that comes with a spice packet and requires baking ... I refrigerate it after it's cooked and then use a mandolin to slice it thinly ... Love these sandwiches!! I use thousand island, since I don't make the dressing from scratch (shame on me) ... and I use pumpernickel bread (rye made with molasses) - - You've done yourself proud with that sandwich ... my mouth is watering
A good Reuben is absolutely my favorite sandwich. Looks like you did a great job with the home-made corned beef. Corned beef is easily available in the stores here in the US, so most people don't make it themselves, but yours looked substantially better than the average grocery store corned beef. The Sauerkraut is always the thing that people assume will be nasty, but somehow it just makes the sandwich. Grilling makes the sauerkraut sweet, and it just sort of harmonizes with everything.
I love Reubens! I'm not sure if you found this out or not, but Reuben has a sister sandwich called Rachel. Reubens are more popular, but you will find both in a NY style deli. Rachel sandwiches use coleslaw instead of sauerkraut. The meat is often substituted for turkey instead of corned beef. I enjoy both, but I prefer a Reuben sandwich. Yum! A pickle is served with both. Usually, it's a half-sour pickle.
I love Reubens. I've never been brave enough to make my own corned beef but after watching you do it I think I might give it a try. It looked simple enough. You did amazing. It looked delicious. The other corned beef you mentioned at the beginning is what you made, just ground up and formed into a loaf. It would have tasted the same but would have had a completely different texture and would have been mushy.
Mrs. H, I can't believe you made a Ruben sandwich from scratch! Literally from scratch! Wow!! As a native American I've never done that and would be surprised if any American did! Hi! I just wanted to say that plenty of us do corned beef at home! My Mother did corned beef, cabbage and potatoes every St Patrick's Day for the whole family! Here in the US you can buy them at the store already brined with the seasoning packet included. Cook it just like Mrs H did...it's easy and so good!
Reuben is my absolute favorite, but I prefer Pastrami and Russian dressing instead of Thousand Island. You have gone miles beyond what everyone usually does by brining your own meat and making your dressing from scratch. Bravo! 10/10
I must say you did a terrific job. That looks so freaking good. Doing it all from scratch must also make it even more satisfying. Yes it requires more effort, but the results were worth it. That sandwich deserves a gold star.
🤤 oh my word! Reubens are my absolute favorite sandwich and it’s unfortunate that so many restaurants can’t get it quite right. Yours looks insane! All your ingredients are on point and it’s grilled to perfection! I’ve never even heard of someone making corned beef from scratch. And honestly I’m probably too lazy to even attempt it, but I can find pretty good from the deli or get a raw corned beef roast from the grocery which is definitely a step up from the deli. Dang my mouth is watering! We’re gonna have to make Reubens now… off to the grocery!
Excellent job. Here in New York City, we are blessed with awesome corned beef and pastrami places. For reference, corned beef is brined and boiled, while pastrami is brined, boiled, rubbed with spices, and then smoked and steamed.
Thank you Brits and Irish for inventing and perfecting corned beef, without which the Reuben wouldn't exist. My favorite recipe calls for sauerkraut, thousand island dressing, cheese, and corned beef on swirled rye bread. Yum.
Many people make the Ruben's with pastrami which was invented in the United States. So yes we would still have the Reuben and it actually tastes better with pastrami than corned beef. Thank you America for such a great sandwich!!👍🏻❤🇺🇸

Corned Beef is an American thing. Back in the day beef was cheaper in America than in Ireland. The jews in NYC treated their beef with salt (corning) as part of their koshering process. The irish immigrants from NYC and America took this tradition back to Ireland

You're a good cook, Mrs. H. The fact that you can adapt the recipes to fit what you can acquire and make them come out pretty close to the originals is a tribute to your skills. In any event, you all should travel to a good American deli and order a Reuben with pastrami just to see how close you got! (Pastrami is fattier, I think.)
@@kentmarsh6442 ya Ive tried doing pastrami but I don't really have a Smoker it's a single box it's mostly a grill, but I use it as a Smoker and hard to regulate temp.
If you can get the meat sliced very thin, piled on thickly, that's the way to go. A proper Reuben is a perfect sandwich. So satisfying to watch you enjoy that deliciousness. Kudos.

The sandwich looks good, just need a stiff dill pickle spear to pair with it. Although Jewish rye is sometimes used I believe Pumpernicle is normally the bread of choice.
Corning your own beef shows remarkable dedication. Most Americans who have eaten Reubens have never done that. The thyme was new to me, but sounds tasty.

You did a great job. I am surprised you made corned beef from scratch. Almost nobody in the United States would do that. Thousand island dressing or Russian dressing is not supposed to be spicy and you put some on the side of your plate for dipping. My wife makes a great corned beef. I actually ordered a reuben sandwich kit from Katz Deli in New York and after eating it I told my wife hers were way better than those. Of course you have to consider they had to ship theirs to us....not bad but not as good as my wife's.

I hesitate to say American style corned beef is not available (because I don't know), but if it is, it's probably only available in London and the surrounding area. Most of the rest of the UK you just can't get it. Corned beef you can get everywhere - British style corned beef that is - but it's very different to the American style.
I have a pro tip for getting your cheese to melt on grilled sandwiches, take an ice cube, or even like a spoon full of water and drop in the pan, throw a lid on immediately, the liquid cooks off and steams and melts your cheese quickly
My favorite sandwich. These days, with diabetes, I'm skipping the bread, adding caraway seeds to the sauerkraut the night before and letting that come together. Then I put the sauerkraut on the meat, a bit of spicy brown mustard, some cheese, and roll it all up, skipping the bread. Where there is a will, there's a way.
Imo the best bread-like keto product is an almond flour tortilla. They're excellent toasted or repurposed as a thin crust for skillet pizza. Costco sells them.
@@loisavci3382 Canyon Bakehouse Keto bread is great when toasted. I get the gluten free variety because the gluten is where most of the sugar is. If you couple that with extremely low added sugars, you are good to go.
@@BalokLives Gluten itself has no carbohydrates. It's a protein. Gluten free foods do nothing to reduce the blood sugar of anyone let alone diabetics. Saying that, if you can tolerate the stuff, why not eat it. Personally, not me.
@@loisavci3382 Yeah, I don't eat the stuff. I'll do without the bread products or have them on occasion and eat pretty clean for a few days after I have it. My treat this week was a cheesesteak sub. I'll fast, then go really low carb for a few days and my system seems to be handling it.

Several things. We also have canned corned beef here in the U.S., but we use the sliced brisket for Rueben and simple corned beef sandwiches. Impressive that you made your own corned beef from scratch, we always buy it pre-made at a grocery store or deli. When cooking it, we retain the brine that it's packed in and add water to cover the meat. It usually comes with a small packet of seasonings that we add to the cooking liquid. My personal quirk is that I save the cooking liquid, boil it down to concentrate it, and save it to make a base for home-made soups (it's so salty that it doesn't take much). To make pastrami, you'll season the corned beef with coriander and smoke it. It's traditional here to eat corned beef and cabbage on St Patrick's day, the corned beef being what Irish immigrants substituted for their Irish bacon, which was not available here back in the days of heavy Irish immigration. Since corned beef is usually available at reduced prices at that time of year, I buy extra specifically to make Rueben sandwiches!
Oh good. Reuben is right at the top for me. It is hard to beat a grill cheese (cheese toasty) or a Philly Cheese Steak. But it is hard to beat a Reuben also. The only time I 'pop' for expensive Jewish Rye Bread is making this.

I’m so happy you’re having fun with this because you killed it here. Great job making that Reuben! I judge a new restaurant by their Reuben. If they screw THAT up, I won’t be able to trust them with other dishes. A great Reuben is a thing to behold and I agree with Mr. H-they’re better than Cubanos. Also a particularly judicious choice in going with the Russian. It’s more “East Coast US authentic” though Thousand Island isn’t unheard of. You get Thousand Island by default in the Midwest US, for example. Southerners put a waffle on it. (Not true: just making fun of us.)
A couple hints on to make it better. Butter both pieces of bread to brown it on both sides. Put the meat and sauerkraut in the pan to heat it up and that will also melt the cheese better. Great that you made your own corned beef. It is a staple in all of our grocery stores here in the states. I usually put Thousand Island dressing on mine.

My favorite sandwich is one I came with up on my own: Turkey, swiss, baby spinach, avocado, and sliced cucumbers on a ciabatta with mayonnaise and mustard. I smoked a turkey breast last fall and made some with that. Incredible.
Impressive that you brined your own beef! Brilliant Mrs.H! I would think that your Branson pickles would go well with it. I personally like a little Dijon mustard on mine for some extra tang.
Great job! Looks yummy. I buy pre-seasoned corned beef brisket here. There's a difference between the cut of meat for a "Texas" brisket, than this cut of brisket for "corned beef and cabbage" and a Reuben. The "cuts" are connect just the top or the adjoining piece. YUM-O! I wonder if Little H would like the beef brisket that you brined. OH... the sandwich is usually served with a dill pickle spear or spicier deli pickle spear as well.
Deli corned beef and pastrami is also often made from a completely different cut than the brisket. Many traditional delis will use beef navel or belly instead of brisket. Good luck finding that at your supermarket.
The deli at my local store makes sandwiches to order, and Reubens are one of their specialties. It’s one of the few places in my city which offers them. A big favorite.

Wow, what a great job making a Rueben. One of my favorite sandwiches. I like to put sweet pickle relish in my dressing, and brown sugar in my sauerkraut. Your cooking skills are becoming very, very good. When you're here in the States next, try to find Franks Bavarian Sweet Kraut, i'm sure you will love it. I love brining, since you've asked. I like to dry brine turkey and chicken. For something like that I would brine in a bag. Like a big freezer bag or vacuum bag.
In 2012 I had a reuben at the Carnegie Deli (closed in 2019) at the Mirage Casino/Hotel in Vegas and it was awesome. It was actually more than I could put down so I took the 2nd half back to my hotel room, stuffed it in the mini fridge and ate the rest the next day. Mrs H, you make the best of what's available and improvise and turn out great food, impressed. I also like that Mr H is more comfortable with pickled items like the sauerkraut.
Corned beef is salted beef brined and raw (the corns are pea sized brining salt kernals). . Which is available at most grocery stores in US and every deli. The sandwich is assembleed and grilled (fried in a pan) which heats the meat and toasts the bread. Originally done with thousand island dressing..

So I use 1 lb. freeze 3 1/2 ever week of march gives me 13 lb. for winter sandwiches. cheaper too to make your self.
Yeah, this Amercan also cooks the corned beef himself but doesn’t corn it himself. Grocery stores usually have corned briskets on sale in March because “corned beef and cabbage” is supposedly a St. Patrick’s Day thing but they should have a few of them available any time of year and they are easy to cook, either simmered in a pot or done in a slow cooker.
One store in my area has corned beef year round in their meat department. If you just buy a brisket cut you can make corned beef, brisket or pastrami. Only difference is in the seasoning really.
@@samuelhowie4543 Actually, I've noticed on the West Coast that getting corned briskets can be easier than getting raw brisket, the cut that corned beef, pastrami and "regular" boiled dinners and/or brisket are made from. As I've said elsewhere, I suspect the large meat packers preferentially send the briskets to Texas and East Coast cities with large Jewish populations.

The magic of the Rueben sandwich is having that many strong flavors to balance each other out. Swiss cheese, and sauerkraut are flavors that can dominate a sandwich, but both together along with a sweet picky dressing and flavor packed meat is surprisingly balanced. Even the bread needs to have a louder that average flavor so it doesn't get lost. I think a lot of people are skeptical of all those pungent flavors before trying it, but a good Rueben definitely rewards the adventurous.
You have the sweet from the dressing, the sour from the cabbage, the salty from the corned beef, the bitter from the rye bread, and the creamy from the cheese. The only thing you don't get isxspixy.
For the way that Ruben looks Mrs h I give it a 10 outta 10

Reuben sandwiches are really good. Impressive you brined your own beef! If you put a lid on your pan for a minute or so, your cheese will be all melty and delicious by the time you pull the sandwich out.
It's best to rinse the sourkraut so its milder in flavor. Looks delicious

Pretty much the only difference between Russian and thousand island is that Russian dress sing is spicy, with Horseradish and Chili pepper, while Thousand Island is sweeter, using a sweet relish typically.
Mr. H's reaction is hilarious and relatable. I dislike rye bread, saurkraut, and barely tolerate pastrami but when all the ingedients come together I actually like the Reuben sandwhich!

I'm from south-central Texas and make Reubens often ... I use the already brined brisket from the store that comes with a spice packet and requires baking ... I refrigerate it after it's cooked and then use a mandolin to slice it thinly ... Love these sandwiches!! I use thousand island, since I don't make the dressing from scratch (shame on me) ... and I use pumpernickel bread (rye made with molasses) - - You've done yourself proud with that sandwich ... my mouth is watering
The brisket brand that we, in the Detroit, Michigan area, is Sy Ginsburg. Pumpernickel is a good sub for the birdseed bread.
A good Reuben is absolutely my favorite sandwich. Looks like you did a great job with the home-made corned beef. Corned beef is easily available in the stores here in the US, so most people don't make it themselves, but yours looked substantially better than the average grocery store corned beef. The Sauerkraut is always the thing that people assume will be nasty, but somehow it just makes the sandwich. Grilling makes the sauerkraut sweet, and it just sort of harmonizes with everything.
Classic pastrami has been smoke cooked, very similar to Texas barbecue but using corned brisket.

I love Reubens! I'm not sure if you found this out or not, but Reuben has a sister sandwich called Rachel. Reubens are more popular, but you will find both in a NY style deli. Rachel sandwiches use coleslaw instead of sauerkraut. The meat is often substituted for turkey instead of corned beef. I enjoy both, but I prefer a Reuben sandwich. Yum! A pickle is served with both. Usually, it's a half-sour pickle.
After watching this episode, I headed for the comments to post that they should try a Rachel, a George, and a Hot Brown sandwich. Reubens are my fav!

I love Reubens. I've never been brave enough to make my own corned beef but after watching you do it I think I might give it a try. It looked simple enough. You did amazing. It looked delicious. The other corned beef you mentioned at the beginning is what you made, just ground up and formed into a loaf. It would have tasted the same but would have had a completely different texture and would have been mushy.

Hi! I just wanted to say that plenty of us do corned beef at home! My Mother did corned beef, cabbage and potatoes every St Patrick's Day for the whole family! Here in the US you can buy them at the store already brined with the seasoning packet included. Cook it just like Mrs H did...it's easy and so good!

The Reuben is one of my favorite sandwiches when done right and a go to when I'm craving corned beef. It's just a perfect combination.
Excellent job. Here in New York City, we are blessed with awesome corned beef and pastrami places. For reference, corned beef is brined and boiled, while pastrami is brined, boiled, rubbed with spices, and then smoked and steamed.
Thank you Brits and Irish for inventing and perfecting corned beef, without which the Reuben wouldn't exist. My favorite recipe calls for sauerkraut, thousand island dressing, cheese, and corned beef on swirled rye bread. Yum.
Many people make the Ruben's with pastrami which was invented in the United States. So yes we would still have the Reuben and it actually tastes better with pastrami than corned beef. Thank you America for such a great sandwich!!👍🏻❤🇺🇸

Corned Beef is an American thing. Back in the day beef was cheaper in America than in Ireland. The jews in NYC treated their beef with salt (corning) as part of their koshering process. The irish immigrants from NYC and America took this tradition back to Ireland

You're a good cook, Mrs. H. The fact that you can adapt the recipes to fit what you can acquire and make them come out pretty close to the originals is a tribute to your skills. If you smoke the corned beef, it turns into pastrami.

If you can get the meat sliced very thin, piled on thickly, that's the way to go. A proper Reuben is a perfect sandwich. So satisfying to watch you enjoy that deliciousness. Kudos.

The sandwich looks good, just need a stiff dill pickle spear to pair with it. Although Jewish rye is sometimes used I believe Pumpernicle is normally the bread of choice.

Thousand island dressing or Russian dressing is not supposed to be spicy and you put some on the side of your plate for dipping. My wife makes a great corned beef. I actually ordered a reuben sandwich kit from Katz Deli in New York and after eating it I told my wife hers were way better than those. Of course you have to consider they had to ship theirs to us....not bad but not as good as my wife's.

Russian dressing is supposed to be somewhat spicy. It calls for raw onions, horseradish, red pepper and/or hot sauce and black pepper.

I hesitate to say American style corned beef is not available (because I don't know), but if it is, it's probably only available in London and the surrounding area. Most of the rest of the UK you just can't get it. Corned beef you can get everywhere - British style corned beef that is - but it's very different to the American style.
I have a pro tip for getting your cheese to melt on grilled sandwiches, take an ice cube, or even like a spoon full of water and drop in the pan, throw a lid on immediately, the liquid cooks off and steams and melts your cheese quickly
My favorite sandwich. These days, with diabetes, I'm skipping the bread, adding caraway seeds to the sauerkraut the night before and letting that come together. Then I put the sauerkraut on the meat, a bit of spicy brown mustard, some cheese, and roll it all up, skipping the bread. Where there is a will, there's a way.
Imo the best bread-like keto product is an almond flour tortilla. They're excellent toasted or repurposed as a thin crust for skillet pizza. Costco sells them.

@@loisavci3382 Canyon Bakehouse Keto bread is great when toasted. I get the gluten free variety because the gluten is where most of the sugar is. If you couple that with extremely low added sugars, you are good to go.
@@BalokLives Gluten itself has no carbohydrates. It's a protein. Gluten free foods do nothing to reduce the blood sugar of anyone let alone diabetics. Saying that, if you can tolerate the stuff, why not eat it. Personally, not me.

Several things. We also have canned corned beef here in the U.S., but we use the sliced brisket for Rueben and simple corned beef sandwiches. Impressive that you made your own corned beef from scratch, we always buy it pre-made at a grocery store or deli. When cooking it, we retain the brine that it's packed in and add water to cover the meat. It usually comes with a small packet of seasonings that we add to the cooking liquid. My personal quirk is that I save the cooking liquid, boil it down to concentrate it, and save it to make a base for home-made soups (it's so salty that it doesn't take much). To make pastrami, you'll season the corned beef with coriander and smoke it.
It's traditional here to eat corned beef and cabbage on St Patrick's day, the corned beef being what Irish immigrants substituted for their Irish bacon, which was not available here back in the days of heavy Irish immigration. Since corned beef is usually available at reduced prices at that time of year, I buy extra specifically to make Rueben sandwiches!
Oh good. Reuben is right at the top for me. It is hard to beat a grill cheese (cheese toasty) or a Philly Cheese Steak. But it is hard to beat a Reuben also. The only time I 'pop' for expensive Jewish Rye Bread is making this.

I’m so happy you’re having fun with this because you killed it here. Great job making that Reuben! I judge a new restaurant by their Reuben. If they screw THAT up, I won’t be able to trust them with other dishes. A great Reuben is a thing to behold and I agree with Mr. H-they’re better than Cubanos. Also a particularly judicious choice in going with the Russian. It’s more “East Coast US authentic” though Thousand Island isn’t unheard of. You get Thousand Island by default in the Midwest US, for example. Southerners put a waffle on it. (Not true: just making fun of us.)
A couple hints on to make it better. Butter both pieces of bread to brown it on both sides. Put the meat and sauerkraut in the pan to heat it up and that will also melt the cheese better. Great that you made your own corned beef. It is a staple in all of our grocery stores here in the states. I usually put Thousand Island dressing on mine.

My favorite sandwich is one I came with up on my own:
Turkey, swiss, baby spinach, avocado, and sliced cucumbers on a ciabatta with mayonnaise and mustard.
I smoked a turkey breast last fall and made some with that. Incredible.

The Branson pickles product is really awful. It’s nothing like any pickles or relish in the US. I guess it’s an acquired taste.
I don't like sauerkraut, Swiss cheese' corned beef, or rye bread, but I love a Reuben sandwich. Somehow it all works when combined together. YUM
Great job! Looks yummy. I buy pre-seasoned corned beef brisket here. There's a difference between the cut of meat for a "Texas" brisket, than this cut of brisket for "corned beef and cabbage" and a Reuben. The "cuts" are connect just the top or the adjoining piece. YUM-O! I wonder if Little H would like the beef brisket that you brined. OH... the sandwich is usually served with a dill pickle spear or spicier deli pickle spear as well.
Deli corned beef and pastrami is also often made from a completely different cut than the brisket. Many traditional delis will use beef navel or belly instead of brisket. Good luck finding that at your supermarket.
I recommend smoking the beef directly after brining for an even richer Corned Beef.
Buc-ee's Reuben sandwich is amazingly good and huge I highly recommend it
The deli at my local store makes sandwiches to order, and Reubens are one of their specialties. It’s one of the few places in my city which offers them. A big favorite.

Wow, what a great job making a Rueben. One of my favorite sandwiches. I like to put sweet pickle relish in my dressing, and brown sugar in my sauerkraut. I love brining, since you've asked. I like to dry brine turkey and chicken. For something like that I would brine in a bag. Like a big freezer bag or vacuum bag.
In 2012 I had a reuben at the Carnegie Deli (closed in 2019) at the Mirage Casino/Hotel in Vegas and it was awesome. It was actually more than I could put down so I took the 2nd half back to my hotel room, stuffed it in the mini fridge and ate the rest the next day. Mrs H, you make the best of what's available and improvise and turn out great food, impressed. I also like that Mr H is more comfortable with pickled items like the sauerkraut.
Corned beef is salted beef brined and raw (the corns are pea sized brining salt kernals). . Which is available at most grocery stores in US and every deli. The sandwich is assembleed and grilled (fried in a pan) which heats the meat and toasts the bread. Originally done with thousand island dressing..
