I use a similar recipe since last few years without adding vinegar and the end result is perfect same like MacDonald. Most people use shortcuts by adding baking soda but this method is class we can easily freez this for months and make it ready instantly when needed.

Vinegar is must and should. French fries will be soggy and not firm and crispy if you don't add vinegar during boiling
