You never fail to amaze me. Cassava egg balls, salt fish cakes and mango sour, ohhh so so delicious. Everything looks absolutely scrumptious. Thank you once again for sharing you recipes. To pick a good cooking cassava, have your grocery cut both ends for you… must be lily white with no water coming from that cassava. My grocery cuts it for me here in N.Y. You are a real professional. Where did you get that cane to juice, it looks real soft. Love those kind of food. When you buy cassava, look for ones that the wax is not damage or if not waxed the skin must look fresh, and the top has a slender stick. If the stick is fat, the cassava will be woody. Enjoy
