      Haha, what a coincidence. I’m just now seeing this video, but it turns out the day you posted this. I was visiting Houston and a coffee shop I went to was selling Third Wave mineral packets. Picked up a few and have been trying it the last few days. However, I think I’ve concluded the water from my Samsung refrigerator filter is pretty decent. I don’t taste a huge diff between it and the third wave.

    So glad that i have very good local water supplier (galon refill) with the reverse osmosis here.
    soft water with balanced pH always give me nice tastes of coffee.
    by the way thank you for your kindness to always share coffee knowledge! 🙏🏻

    I'm having flashbacks to maintaining water for tropical fish with all these additives. Our water is hard as hell here so the BWT filters work just fine. I'm done playing with water chemistry, hut I will have that stovepipe hat I've had my eye on for a while.

    I always hated Contrex water when growing up, so yeah I wouldn't be surprised of the result!

    Great vid! Would have loved to know your thoughts on making own water from scratch like they recommend at Barista hustle with Distilled water, Baking soda, Epsom salts, citric acid. Probably way cheaper than ordering 3rd Wave or Lotus, at least here in Japan.

      Maybe cheaper but man I don't wanna play with that. Too many unknowns. Third wave water tasted amazing, and it's not expensive considering how much I spend on coffee beans 🤣

    Great video, I found it very informative! Question, what was the TDS for Third Wave Water? Unless my TDS tester was off, with the Third Wave espresso profile I was getting 118 PPM. Do you think I should reduce the dose then since it well exceeds the recommended PPM?

      I forgot to include it, thanks for noticing. The TWW water was around 105 for mine. It is higher than the recommended, but not significantly and it just tastes so much better. I also heard since I posted this video that there are many different measurements and recommendations for water hardness. TWW is not too high, just don't go putting that Contrex crap in your machine 🤣

      Btw I know handmade soba shops need very clean mountain water. I went to one near Fukuoka once.

    Good video, but did you consider doing a blind taste test? Since you have a bias after knowing which water you’re drinking…

      That is a good point, I'll invite a barista friend over next time to make the coffees for me. But honestly it's such a big difference that I was kinda shocked. I love the flavour I got after using custom water instead of just filter.

    Espresso is definitely not 98% water

      How much % do you think it is? Most of the flavour of espresso is just dissolved solids 😎

      @@homecafecharlie 87-93 ish. Considering the dissolved solids are 7%-13% . A filter coffee is more like 98 or more

    I’m all fairness Tokyo has some of the worst water I’ve ever tasted, it stinks of chlorine, just nasty.
