How the hell do these crabs get so far down into the mud?
They must have no other option. In some countries the price of protein is very high.
They dig. They are good at digging . They have so many legs. The longer they live in the mud the stronger and meatier they become. Then shell will look rusty, and that's how you know they are meaty. Its the opposite of weak shell and less meat. So when you are buying these crabs you should choose those that look rusty in the bottom.

One does not eat crabs for protein. If you want proteins, just buy a meat.
We use longer iron rod with a little bit of curve at the front to pull them out. Yes, sometimes we have to dig. The easiest sign to tell they are inside there is to look for fresh mud around the outer hole

There is not easy to catch a big crab in the river!
In the river, yes. You can lower traps with fish meat inside. You can also use very long sticks with round net tied around the stick and clipped fish meat on the sticks near the bottom of the net. You can tell when the crab is biting the bait. The stick will vibrate and create a circular movement of water around the stick. Off course you need to be on a small boat. I had 20 sticks on the boat when I went out fishing for crabs. Stick them into the mud come back in 15 minutes. Tie up the crabs and then you go back to the sticks repeatedly. Best time is when the tide is going up and when the tide is just ebbing. They follow the movement of the tide looking for food.
