You should make this corn casserole, it's one of my favorites 1/2 cup unsalted butter melted 1 (8 oz) container Sour cream room temperature 2 large eggs room temperature 2 tablespoons granulated sugar 1 (15 oz) can cream style corn 1 (15 oz) can sweet corn drained 1 (8.5) oz box Jiffy corn muffin mix salt to taste Preheat oven to 350 degrees F and grease a glass 9x13 inch baking pan with cooking spray. Set aside. In a large bowl, whisk together butter, sour cream, and eggs until well combined. Stir in sugar, cream style corn, sweet corn, corn muffin mix, and salt. Pour mixture into the prepared pan. Bake in preheated oven for 20-35 mins
As a vegan, sometimes the simplest of meals is all you need! I love just a plain baked potato with a bit of salt, or fresh salads with lemon and Himalayan pink salt as the dressing. Great job with the meal Kay!

Some tips for you though Kay, get the water boiling before dropping the pasta in to not overcook the pasta(follow the time on the packet minus a minute or two) , in the pasta water when boiling, put in some salt, a tablespoon or two to season, next the tomatoes blend then before hand or crush in the pan to get a more saucey texture and bring that sauce to a boil to also thicken a little, when the pasta is cooked drain, then put into the hot pan with the sauce to let the sauce stick to the pasta a little and combine with the starchy water left on the pasta, season with pepper, herbs, sugar (because tomatoes aren’t sweet all year round). The potato coat in oil before putting it in the oven to get a crispy skin and when you take it out and cut it, use a pinch of salt, butter, and a fork to fluff it/ mix in the butter and salt
