  • Asalamualaikum all, hope you are all as excited as ramadan as I am. So here is my final ramadan preparation video for ramadan 2023. Join me as I organise my fridge and make some food items to refrigerate ready for ramadan to begin. Hope this inspires you to get your last few bits done insha'Allah.
    FRIDGE ORGANISERS - amazon versions

    lONG CONTAINER BY THE FRIDGE DOOR - amzn.to/3JSihwe
    REUSABLE SILICONE BAGS - amzn.to/40jYoUj
    SPINACH STEW
    - CHOP: SPINACH,ONIONS, TOMATOS & SCOTCH BONNET PEPPERS
    - HEAT OLIVE OIL TO YOUR PAN
    - FRY ONIONS TILL GOLDEN BROWN
    - ADD CHOPPED TOMATOES & SCOTCH BONNET PEPPERS
    SEASON TO TASTE
    - LEAVE TO COOK UNTIL FOR 10 /15 MINUTES
    - ADD DEBONED PIECES OF MACKEREL FISH
    - LEAVE TO COOK FURTHER FOR 5 MINUTES
    - ADD WATER TO A CONSISTENCY YOU ARE HAPPY WITH
    - ADD CHOPPED SPINACH
    - COOK FOR FURTHER 5 MINUTE/ UNTIL SPINACH WILTS INTO THE STEW
    SERVE WITH RICE, COOKED PLANTAIN OR WITH FUFU
    AKARA/KOSE (BEAN FRITTERS/PUDDING)
    -Soak for about 30 minutes or over night/two days till the skin swells.
    - Peel off the skin of the black eye beans using a blender and pulse a couple of times to split the beans (the easy way)
    - Blend the peeled beans with peppers, (crayfish,) salt, and bouillon powder (or cube).
    - Whisk until the batter becomes airy and fluffy. This will take about a minute to 5 minutes depending on the tool you use.
    Electric hand whisk takes about a minute to two, regular hand whisk will take about 2 to 3 minutes.
    - Stir in the diced onions.
    - Preheat the oil and scoop the mixture by spoonfuls into the pan
    - Fry till golden brown!
    KOKO / OGI (MILLET DRINK)
    - SOAK MILLET FOR A FEW HOURS
    - Add together: millet, water, black pepper, ginger and chilli if you prefer
    - Blend till smooth
    - Sieve using a cheese cloth and squeeze the liquid through
    - Leave the sieved liquid to ferment overnight
    - Remove the top layer of liquid and save in the fridge
    - Scoop the thick layer into a zip lack bag and refrigerate
    - To make right away, mix the top layer of liquid with the thick millet and stir on medium heat until the consistency changes into a thick past. Add water to create your prefferd consistency.
    - Serve hot with plenty of sugar. Serve with Akara or toasted bread

    Nafisa, I found that grating the beans after soaking takes away many of the beans. I always grate the beans when it is dry, then I remove the shaft and then soak it. It works very well, and I spent less time during the process too, lol!! Ramadan Mubarak to you and your family. Akara and Moinmoin are solid dishes for Ramadan. 🤭☺

    Allahumma barik, the soup looks delicious. I also like to eat koko and akara/kosai during Ramadan.

    Assalam aleikum Sister, I love akara but it's a bit of work to make it, I did not know that it was possible, once remove the skin, to freeze it. It's helping a lot. Thanks, may Allah swt bless us in this Ramadan.

    I would recommend you get freezer bags from Costco or anywhere else. They look neater in your freezer plus you get to write on them with a marker x

    Salam Alaykum Sister Nafisa! In regards to the beans for Akara, i definitely felt that, growing up I was in charge of removing the peels from the beans in preparation for moin moin and akara. In recent years my mom has started buying prepeeled beans prepared just for akara and moin moin at the African store. Just thought I would share in case maybe your local African store may have something similar to make it easier for you to make and enjoy your Akara InshAllah :)

      Walaikumsalam. Yes I’ve seen them but I’m just a bit nervous to try them out because I don’t know how I would digest them because the soaking for 2 days part is what really helps me. I think I’ll buy a small bag and see how my digestion handles it insha’Allah.

      Walaikumsalam. It helps to deodorise smells so when you open your fridge, you don’t get a bad smell. I always try to have an opened box in the fridge. You should try it out.

    Assalamu alaikum sister....I would like to ask you a question....I am south african muslimah with a 4type hair a very coarse hair ...so my question is it allowed to dreadlock your hair in Islam.. just on top not too deep that water can reach the skin..I want to take a break in relaxing my hair ...so I was thinking to dreadlock my hair until it's long enough to cornraw it or maybe to relaxe it again...jazak Allahu khair
