I found the consistency a bit too runny...but the pie dough done by jamie looks too good &even the pie he made using the dough..I might sub the meat though (m vegetarian! !)
I actually prefer to prebake a layer of puff pastry on the bottom of the shell and then add the filling, then close it off with the top, I just don't think the pie has enough pastry to balance the filling to pastry ratio if you just have a top layer

bad idea... it will be soggy and you would not get the puff of the puff pastry ... what you could do is use pie crust instead and that, my friend, does work as you suggested!

Mine came out too runny, and the pastry didn't puff (perhaps the steam from the liquid kept the temp too low?) We can't get bacon in the States, so I used one of those ham steaks...the ones that are swollen like a tick with water to boost the weight. I blame that for the runniness, for the mixture looked like Mr. Skehan's going in...
Donal, I tried this but the cabbage came out horrendously soggy and the pastry caved in! Do you have any idea why this happened? Also will you have a meet and greet soon?! You are too adorable!
stormami Just to let you all know that the turkey bacon was a success! Reports from CA, USA. My mother is unable to eat pork, and I am unable to eat beef, so we eat a lot of turkey; it worked like a charm. Personally, I went very light on the salt and pepper, and I'm glad I did. Next time, I intend to add in some carrots; I'm not sure what carrots would place that we felt it was lacking, but my house has come to the conclusion that carrots would be the answer to it. Instead of using broth/stock and cream, I used 2% milk until I had a thick sauce. I was getting tired and didn't want to look for broth/stock. It would have added a fuller flavor, I suppose, if I had gone about finding it. Unfortunately, I was out of any good quality pre-made mustard, so I had to use French's; not bad, but if you are looking for a bold mustard flavor I highly recommend finding a British mustard. French's isn't bad mustard, I just don't think it's a good mustard.
Donal Skehan I'm confused. it says bacon, but you used ham and suggested bacon (Irish style bacon? Explain that for us?)...Now, ham is cooked pork...but its raw when you put it in? HELP! what cut of uncooked pork was used??

You could try that but the colour from the cabbage will seep through and you'll be left with a purple sauce! :)

Is 'English' mustard a hot mustard or mild? :)
It's got a kick to it......no like hot pepper kick , more like horseradish kick . Common English mustard brand is Colmans .
It will hit your sinuses for sure but hot mustard mellows out a bit as it cooks.

Actually Jamie show how to make a pie pastry. A puff pastry are way different to make.
