Jamon Iberico is spanish ham made from black pigs. The "Bellota" part signifies that the pigs have been fed only acorns, which makes it the best and most expensive type of Jamon Iberico. Jamon Iberico actually just means spanish ham. There's another spanish ham that is also extremely good, but way cheaper, that's called Serrano. I've had Serrano that I'd actually prefer to Jamon iberico, it's nutty as hell.
I can't claim I invented it, I'm sure there's plenty of others that have tried, but I did come up with a recipe for Cacio e Pepe finished with roasted bone marrow that is pure fire. A twist on steak+Mac and cheese
If anyone is throwing shade about the so called "wastefulness" of this experience... These ingredients are food first before anything else and were raised to be eaten. I think it's joyful to celebrate how wonderful food can be. And not one bite was wasted. I can understand the folks out there who go after other channels where you see food going to waste. It's just decent tomatoes rubbed on the bread. The reason why you think it was so good is because the quality of tomatoes where you live are so poor and mass produced like most countries. People have got used to mediocrity.

Bro, go to Madrid, I went to this famous gastronomic market called San Miguel Market and I literally had jamón that changed my LIFE. Didn't like jamón before it because the imported stuff is sometimes just the cheap meat that is just all fat no meat but this stuff was another level.
Iberico is just insane all around. My local wegmans stocks some really good meat, amongst that is iberico chorizo. It’s such an earthy, deep taste and you just can’t go wrong with it. I know this was good

When I lived in Spain this was my favourite breakfast. Just not with super expensive jamón iberico. Haha. I had to go for the cheaper cured ham. And not heaps of it. Just a little goes a long way. I think the problem with eating that much jamon in one sitting is the the amount of animal fat which might not settle right in the GI tract, making it possible to be literally sick to one's stomach.

We also sometimes buy a whole leg of ham for your whole family and cut it ourselves very thinly and lasts months
