Did you know that the Curry leaf tree considered as an exotic treasure represents the culture of food of the Indian subcontinent where it grows in the garden of just about every home?
The unique aroma and flavour of curry leaves is due to the presence of essential oils in the leaf tissues. Thus, adding curry leaves as seasoning as a standarad ingredient, in food preparations, particuarly in South Indian cuisines, gives the food a uniquely pungent, bitter taste and mild aroma and flavour. Leaves are made into chatni also. Its extracted oil is used to make scented soaps.
It has health enhancing antioxidant vitamins and minerals, including a-tocopherol (Vitamin E) and naturally occuring carotenoids such as carotene, and lutein. Its use lowers cholestrol and glycemic index levels. It is estimated that consumption of 100 grams of fresh curry leaves provide a human body approixmatelt 108 calories of energy.
