Pani puri. The fried dough ball is called puri or golagappa made with a mix of wheat and semolina flour. The filling can be potatoes, sprouts or white snow peas (the one you had, which they kept calling ragda). The water or pani is made from mint and coriander chutney, spiced with some more powdered spices and salt. There is another tamarind chutney which is the sweet one. They add both, you can adjust the ratio according to your taste.

In pani puri the puri part is a puff generally fried bread you may say . The filling they used called as ragda is mashed potatoes and chickpeas (garbanzo beans) with some indian masalas . And the water (pani) they used is actually flavoured water that can be of different different flavours. This whole combination is call pani puri or golgappa.

In pani puri the puri part is a puff generally fried bread you may say . The filling they used called as ragda is mashed potatoes and chickpeas (garbanzo beans) with some indian masalas . And the water (pani) they used is actually flavoured water that can be of different different flavours.
This whole combination is call pani puri or golgappa.

Pani puri is made from semolina flour(optional)with so levening agents water salt and the dough need to rest and when you fry it ,it will become big(according to the vendor near my house)
