Watching you make Papa tacos takes me back to my childhood, My Momma would make us some when money was tight. In my Mommas Papa tacos she would grate some cheese in and add fresh finely diced white onions and fry them for about 3 minutes..drizzle some salsa over them ...and Yum ,the Best Tacos ever! Sometimes something so simple made us so happy, it was comfort food and we all appreciated it. Thank you for sharing your beautiful family with us.
How long have you been living on the ranch? We lived in Ensenada. We built our home and had it for 20 years. Now back in the US but go down to Mexico often via CBX in Tijuana.

The chickens and ducks are so cute! What a fun place for your son to ride his bike! Those potato tacos look so delicious! So does the salsa! Great way to reuse leftover mashed potatoes! Now I am going to have to make these, as I know how delicious they are!
