The default setting does keep the random flocks of birds closer to the ground and usually only around the airport but you can set up a custom failure for a bird-strike and either activate on demand or have it set to a semi-random scenario as I did with this one. The bird strike as well as several other failures can be setup by going into failure menu and choosing the failure or group of failures you want such as a bird strike and as mentioned it also gives you a few ways to actually execute them (no pun).

Generally the first course of action would be obviously check the environment and/or alert controllers so they can help monitor your surroundings but as far as action it would be ideal to find a safe landing area preferable near the airport if not at it. CAPS would only be a last resort if say you got into a flat spin or you were no where near a safe strip to touchdown on then you would deploy it. This was a scenario to test the CAPS specifically so that is why it was the first line of action.
If I am flying it then the SOP is usually insanity and a touch of smash into the deck or a cliff-side. Honestly though if more models had this feature I would probably just use it all the time. Especially if you get good enough where you can deploy the chute at the perfect time to float right into your gate or parking spot or even float towards the hanger and then jettison the chute just as you near the gate where you can let in coast right on into the hanger.
