    It is very easy to make bitter gourd vegetable, so let's know.
    The mentioned ingredients are for 4 to 5 people.
    *necessary ingredients*
    Bitter gourd - 5 to 6 (500 grams)
    Onion - 2 cut into long pieces
    Green Chilli - 2 Mahim chopped
    Mustard oil - 3 tbsp
    Cumin - 1 tsp
    Turmeric powder - half a teaspoon
    Red Chilli Powder - 1 tsp
    Amchur powder - ½ tsp
    Coriander powder - 1 tsp
    salt - as per taste
    Bitter gourd vegetable recipe
    To make bitter gourd curry, first peel & wash the bitter gourd thoroughly.
    Now cut the bitter gourd into round & thin slices & keep it in a plate, add 1 tablespoon of salt over the bitter gourd, mix it well & keep it for 2 to 5 hours. Then wash 2 times. This will remove the bitterness of bitter gourd.
    Now keep the plate with bitter gourd aside.
    Now put mustard oil in a pan & keep it on the gas for heating.
    When the oil becomes hot, add cumin seeds and fry it.
    When the cumin starts crackling, add onion & green chillies & fry the onion while stirring with a ladle till it becomes golden.
    When the onion becomes golden, add chopped bitter gourd to it, add turmeric powder, red chilli powder, mango powder, coriander powder & salt & mix well with a spoon.
    Now cover the vegetable with a lid & let it cook on low flame for 10 to 15 minutes.
    After 12 minutes, remove the lid & cook the vegetable for 4 to 5 minutes while stirring with a ladle on high flame.
    Turn off the gas after cooking as per schedule. ,
    Enjoy, the *delicious bitter gourd* curry is ready.
    Now take out the bitter gourd curry in a bowl and serve it with roti.

      There are some suggestions to completely remove the bitterness of bitter gourd vegetable.
      First when marinate it with salt remove all the seeds and wash it two three times to remove the salt and then squeeze every drop if water from it . Then use 1/2 tsp fren greek seeds (methidana),1/2tsp fennel seeds(sauf),1/2tsp jeera,and 1/2tsp kalonji for tadka.
      After cracking tadka add karela to the pan and fry them till they are golden brown . Now put sliced onions in the pan and fry them with karela for 5minutes continuously stirring on medium high flame . Now put salt, red chili powder, turmeric powder coriander powder, garam masala and mix all of them and cover it lid fo r 15 minutes on low flame. Stir it in between. When it is cooked completely add 1/2tsp amchoor powder and serve it roti . By squeezing out all water will make karela bitterless and tasteful . You will ask for more again and again 😊

    Salt helps in removing the bitter juice from the karelas. Keep bitter gourd in very salty water for 3 to 4 hours. wash it and then cook it like bhindi.

    My south Indian neighbour used to sun dry thin slices of Karela. Then fry these as chips. Tasted soo good 😋.

    Karela is something you either love or people avoid it as a plague. I simply love it and can eat a kilo if I have to. It is simple to make. I just add oil, turmeric powder and salt and fry it to crispiness. No more masala or additives. One need to love the vegetable for its bitterness and as per Vedic way of eating, eating bitter like Karela or Neem are good for health.
    Another recipe from Northeast India is you boil the bitter gourd and like mashed potatoes, You can also mash the Karela, add a little chilli, Dhania with a little bit of mustard oil and there you go. You have mashed and healthy Karela.

    Bhai you tried your best, but I can give you a small suggestion cause as you said it is prepared during the special occasions, we too prepare at our home by adding small amount of jaggery in it. You can try it it's really good. Sylwia mam really thinking logically by adding honey to cut its bitterness..great!

    Sylwia nailed it! Kerela is usually cooked with jaggary, and also it needs to be soaked with salt then rince well before cooking. Kerela is a popular dish in Gujarati the state of my husband…and my mummyji makes kerela saak delicious 😇🙏🏻

    I love bitter gourd ❤️ I used to hate it but my mom used to cook it by removing the seeds cutting a bit vertically and filling with crushed peanuts and make it crispy and she used to add some jaggery in between. Trust me it's delicious ❤️

    Karela and our childhood have memories that go way back .
    Can remember like different ways my mom used to make me sorry force me to eat it . Btw I quite actually grew up liking them after a period of karela taste buds torture. My recommendations stuffed karela with mashed potato inside hollowed out karela, karela chips with besan, karela juice with rasgulla and other sweets and sugar

    (for fresh krela, not sure about frozen) Rub it with salt and leave it for some time so it will release it's bitter juices and drain out juices by wringing it then follow the recipe and you had done earlier you don't need honey and seeds will become star of show.

    In the journey to become a complete vegan I am about to complete 1 year next month. Definitely, its my favorite. I was looking for it in local vegetable market for last 2 weeks but unfortunately its off-season. I cook it as simple as possible putting few things like turmeric powder, pepper and salt only. I sometimes try whole of a large sized Bitter gourd, removing its seeds, making it hollow, put some fillings like mashed potato and then finish up frying in a pan, called ''Karele Ka Bharva''.

    in your case.. unfreez the bitter gourt .. and bring it to room temperature.. put 1 table spoon of salt before cooking... mix it well ... and then wash the whole batch.. then cook as you like.. it will taste delicious..

    Squeeze some lime and also roast peanuts. Instead of lime you can also put tamarind puree and some jaggery for caramelizing it. Yes the spices and chilli also goes in with it after frying onions 😁

    Meru & Sylwia, Good for diabetics, full of iron. Four bitter gourd. Remove all seeds n cut into small pieces. Add 1/4 Tspoon Turmeric, Chili powder, coriander Garam masala, salt as per your taste. In a tawa, add 3 Table spoon of oil , Sautee for 20/minutes(keep stirring not to stick n burn in the pot) to remove kacha taste of masala , add chopped tomato n stir for another 10 minutes on low flame.. You can temper it with Shallot/curry leave.

    Put karela plus salt plus curd 2 tsp leave for 12 to 24 hrs to remove bitter test wash in water to remove excess salt cook as u have made u can add tomato puree or dry mango powder

    Before making boil the Karela it will reduce the bitter ness and then fry it for some time to loose the water inside of karela then cook it

    Why most of people don't like it because it's not cooked properly in many house .
    My mom makes it perfectly
    Marinate it in salt then squeeze the water out of it so all the bitterness will go out with water (it's the process of osmosis which aims to inactivate the enzymes in bitter guard) and then fry the onions and karela .then usme coriander seeds ka tadka lgao .. with masala paste of coriander powder turmaric and when your masala get prepared with oil add the fried karela and onion and sprinkle some red chili achar masala if you have in your house 😋 have it with Puri

    Our Ancestors used to say and now even doctors says you won't need any type of diet or exercise if you eat Karela as a meal everyday to remain super fit and healthy until your old age
    My mother made Karela as an type of achar(pickle) that could be eaten with any other dishes on daily basis even though my mother made karela bitterness a way less but still I don't have guts to eat it every single day though I can eat it with an interval of a day or two.
    Edits - Karela is seen as the healthiest food on earth in our Ayurveda which break down almost all diseases, increases your immunity, Fat killer (it just eat useless fat in our body), purify your blood for smooth pumping, Cancer killer and much more
    most people drink green tea and coffee every day to remain fit but Karela is on another lvl as it as has 100x times more effect of green tea on your body but again deep frying it or adding sugar on it just loses the meaning of having healthiest food title it got 😅 🙃 and won't remain as beneficial as it is with simple cooking. Karela is seen more as healthy food than tasty food in India though you can reduced bitterness by adding Green Mango (Kacha Aam) for sweet and sour taste, more Onions for caramelized, curry leaves for better smell and for Oil Shudh Sarso Tel (Pure Mustard Oil) is an ideal type and best one for karela which is healthy 😋 😀 😉 that is the perfect recipe of my mom which she learned from my grandma for Karela though there might be thousand of another recipes out there all over India. But I don't suggest deep frying, adding sugar of any types or adding too much oil specially if it's refined oil, olive oil or any another only Shudh Sarso Tel (Pure Mustard Oil) is the ideal type of oil for karela that has more benefits for your health.

    Just cut them small slice (like potato chips) and just deep fry them. Some salt and just eat. Make sure it's crispy 😎

    Slice it and mix with salt and dry in the sun well. You can keep it for months. It becomes crispy when u fry.

    Put emli ki chatni in the last while frying. But before the very first step is to blanch I. Salted water for 10 min. before putting it in a frying pan.

    Instead of honey use jaggery mixed in water while cooking and reduce on low heat ... It will be savoury if you add green chilli to this .. this will mild the bitterness

    Karela recipe from Kerala. One way is cut karela into nice thin round shape. Add curd and salt and mix it well. Dry each piece under sun or if you have any drier machine. Once it's completely dry. Fry those in hot oil. This is used as a pickle during rice and curd.

    Karele ko pehle 1 hour tak namak laga kar rakho or jab ye pani release karega tab fresh water se dho kar squeeze Karo. Jab Sara pani nikal jae fir isko oil mein fry Karo. Then put onion and rest of masalas especially sounf and chat masala ya amchoor powder. And Silvia is right fry some potato along with.

    Karela is very good for health as I understand. Make fresh juice with Karela, its bitter, and cook the pulp, very good for health. Diabetics drink the juice I think. Karela chips are sold, but deep fried is not good.

    Karela ka chips bhi bnta hei Bangalore mei, raha bhujia jo aap banaye ho wese hi pr thin cutting hota hei . Sbse bich mei se thin cut krke andr ka beez nikal do then usko pakao aalo ke saath , thoda sa deep fry . Akhir mei tomato puree yah ketchup dedo hisab se aur kha kr dekho
