You are spending too much time trying to mine out every single block. As the difficulty ramps up each night, there is a time element trying to go down fast as well as getting resources for upgrades. You should aim to only mine blocks that give you resouces, and avoid spending time trying to mine "empty" blocks. Only mine "empty" block is you need to make a path, or there are no more resource blocks left. Also have more carriers, you are left with a lot mined out, but resources on the ground, so it means you are not shifting them out fast enough.
