still working on the lard, I haven't got it figured out yet, other than the fact that I likely picked up scraps with some lard in it which isn't the best..
I found rendering lard by boiling it in some water worked the best - no burning and sediments sank to the pot bottom leaving a cleaner lard. A shorter 2nd boiling (after filtering) made it even cleaner and with no extra preservatives. We also made a similar veg soup and turned out so well that we've almost run out already despite tripling the original recipe. Next year we'll make 7 times as much. Hard to beat real food.
Hi Toni - chicken vegetable soup is one of my favourites. It looks real good. I always have to add an extra jar of chicken broth as well. As you said - old chickens make the best soup. ❤️
It's nice to have homemade soup on shelf. I have yet to can broth. I make a huge amount and freeze in 2 cup servings. Last month I put 40 cups into freezer. A lot , but I use 4 cups a week in homemade soup.
I rarely can the broth anymore. Mark still likes a pint every morning during the cold weather, so I make a new batch every week and just refrigerate it.

But you have really inspired me to get going on this and your demonstration gave me confidence I needed to make a batch of chicken soup next as I do have chicken in the freezer also.
Soup looks good. Like you I hate soggy vegetables so I can my meat and vegetables separately. Just finished canning a bunch of sliced potatoes and onions in home made vegetable stock for breakfast meals.

Hi Toni! I have 4 young cockerals in the freezer that we dispatched this summer and I plan to do something similar with them. I may throw a couple in the intsant pot first though. I did that once with a few grouse that were given to me and it makes the meat fall right off the bone nicely. Plus it's super fast.
Mark used to make the chicken soup, and he always left the bone in the leg and wing. He likes those like that...but yes there is no reason not to remove the bone especially when you are canning the soup.

well they turned out perfect adding them in raw (for canning) with the cooked chicken!
I render lard in my oven at a low temp until meaty parts get crispy, and then just strain. Easy peasy.
Yeah, next time I will try to find better quality lard!

sometimes I would have liked the smaller one too, but I just don't have space for any more kitchen appliances/tools
We process all our spent layers and use them exclusively for soups and stews. This year we kept 20 for us and sold 40.
yup, I recall a year where my mom bought "spent layers" for $.25 each...and that was a real score then too!

May I ask why you didn't remove the meat off the bones?
