    You are an EXCELLENT teacher! I’ve been watching sourdough videos for a couple months and you answered so many questions I had that no one else had addressed so clearly.     I love sourdough, but I don’t have a bread maker so make it by hand. I normally do a 24 hour ferment. I put it in the fridge over night in the basket with shopping bag. There are so many ways to make sourdough and I love seeing all of them. Thanks so much Pam and Jim. 🇨🇦🌷

    Hi "Rose", I commented on your video where you reviewed your Bread Machine because I was so happy to see it! I bought the same bread machine but simply didn't have the time to get around to trying it out. But watching your video helped jumpstart me! However, the reason I bought the bread machine is because the woman in the kitchen store demonstrating it said you could use it to make sourdough. Yay!! I love sourdough, so I was sold! And now that you have demonstrated using your bread machine to make sourdough, I am so excited to to watch you do this experiment. Thanks so much for all you do!!     After watching another bread baker on youtube, I have purchased an electric knife for all my bread slicing ... it's a game-changer! Nice and even slices with little effort on my part. :) Your sourdough loaf is beautiful! I so enjoy watching your videos! :)

    We were hoping to use bread machine for baking, not mixing as that only takes a few minutes. We do a long proof/ferment in refr overnight (really helps with scheduling) then bake. Hoping for more success with the Machine using my WW n Seeds recipe. Thanks for another great instructional vid. Retirement agrees with you, Dr Pam; you look gorgeous!

    I have been trying to make sourdough bread for a while now, probably about a dozen loaves, with mixed success. I keep trying different recipes and videos but I learned so many things in this one that I had never seen explained before. I have never used my bread machine for sourdough and I will try it right now but even if it fails, thank you for all the new things I have learned.

    Sourdough is generally moist enough you can freeze a loaf or boule, and eat on the other. Just be sure to thaw at room temp until it is thawed clear through before getting into it. You might loose a bit of crustiness....but beats starting at the beginning when you are on the trail, or vacationing and have a full day planned and you can't 'breadsit' every couple of hours....

    Busy mom, in grad school, working full time. I used to make yeast bread by hand but i do not have time. I got a bread maker and now can make bread for myself and my family easily. I appreciate this as I am just starting sourdough. I know if I can get some help in from the bread machine I am more apt to do it! Thank you!

    My Sourdough loaf looks just like yours! I'm so happy! I think I missed a step after the dough cycle. I removed the dough very gooey and put it in a bowl to rise. After it rose in the bowl I poured it into my pre-heated dutch oven (I think mine's larger than yours) so I put a thick cake pan in the bottom, lined it with a long sheet of parchment for easy removal. Voila, the top "bloomed" as you said. The crumb is beautiful. Thank you. We will be traveling to Oregon with a small travel trailer. Now I know I can bake bread with my Dutch Oven on the road (using coals of course). Thank you. Delicious bread.

    During Covid i learned how to make Sourdough bread….(and Kefir !)……for the first time…….i was hoping you would not burn yourself when you placed the dough into that very hot Dutch oven……i put a piece of parchment on top of the banneton and invert it on the counter…..score the bread and then you can pick up the parchment with the bread on top and lower it into the hot Dutch oven…….i actually pull the sliding oven grate out , remove the lid, and place the bread dough into the pan……it is the best bread ever !!!!! Thanks for showing us your technique!…..

    Thanks! I have my first sour dough starter ready and no Dutch oven but have an old bread machine from my aunt I never used. The recipe I have will take 8 - 12 hours from mixing to slicing! Hoping for something quicker or I will do my second rise in fridge over night. I grind my own wheat berries and am using hard white for this. I use soft white for pancakes with half buckwheat. Just getting into growing, canning and bread making.

    I am so glad I saw this video, I am going to try the bread machine for my sourdough bread. It has been in my fridge for a while. It has been a very hot and humid summer, we have had trouble with ants and nates but it is starting to cool down now so I got it back out and fed them. I also started a friendship bread starter. I am getting ready for fall. Can't wait to start baking my breads again.

    I worked very hard to make sourdough starter. Went thru a ton of flour. I was told if you get hootch it had gone bad and to toss it. Now I find out you can just pour it off. Grr- will start another batch as I had given up because I don’t like to waste that much flour.

    I think there is an error in the video. As I am in Europe I prefer using g, especially with something as hard to measure by volume as Starter. You said to add 500g of flour then on-screen the caption said 3 3/4cups or 540g. I Googled it to check and most people say that 500g is 4 cups so that is close enough but 540g would be way too much.
    EDIT: OK maybe I should have gone by the Caption as after the dough cycle it was so sticky that it was unworkable. I have added an extra 40g and started the dough cycle again.

    I will definitely use my bread machine in the summer time.
    But it's almost Thanksgiving, so I'll use my oven.
    I bought a cast iron loaf pan with a lid, on Amazon, so I can have normal sized slices for sandwiches. My first attempt failed, but I'm pretty sure that was me, not my pan...
    I have my second attempt in the refrigerator right now, hopefully developing flavour.

    I’m a home bread baker making yeast and sourdough breads. I make my sourdough by hand since it takes at least 4 hours to bulk ferment before shaping, the reason a bread machine can’t be used. Not sure if you added extra time after the dough cycle for fermenting, which is only 1 1/2 hours. I don’t see the recipe for this anywhere, even on your website.

    WOW! What a great recipe. I tried it - fantastic. I use bread recipes from "Brilliant Bread Making in your Bread Machine", using a Sunbeam machine..... the sourdough recipe there is meh..... I love the use of the dutch oven and the concept of 'steaming' the bread while baking, before the final browning. I used starter only, no yeast.... it took 24 hours to rise!!!!! well worth the wait. The starter comes from the above mentioned book. From now on, I'll use the machine in the dough setting, rise and bake in the dutch oven.
    Thanks again! I'll definitely be checking out your other bread making videos.

    I'm terrible about feeding it myself. Picked up from the Elliot Homestead channel which she got from another website on doing a dry starter. It's like bread dough in consistency but you don't have to feed it but every 2 or 3 weeks. Also make with extra sugar for the yeast. Been doing that, seems to work pretty good.

    I am a sourdough starter murderer! It always starves through neglect but you have encouraged me and commercially made s/d has tripled in price here in our part of Wales.
    My breads are all cooked in the Dutch oven. I did try a bread maker, but never liked the results.

    Thank you Pam, for your sourdough recipe to use in the breadmaker! After watching your video about the Cuisinart, I bought one too! I’ve made French bread in it, but wanted to do sourdough, just like you…taking it out of the bread maker & finishing it by hand & baking it in my cast iron Dutch oven. I know you said you’d be doing sourdough by hand from now on, & I might be too. But, I wanted to give it a try anyway.
    When I watched you making French bread in your breadmaker, you mentioned doing sourdough. So I’ve been waiting for your recipe so I could use it. (I certainly didn’t want to use the Cuisinart’s recipe!) So thank you again! And, Jim too! You’ve taught me so much & I love watching your videos, even though I can’t always see them when they’re first out. 😊

      What was the reason your not doing sour dough in your bread machine? I must have missed that part. I love making the dough in mine and forming my own loaves or rolls. This was good timing I cough your video. Sourdough is on my list.

    Place the dough on parchment. Lift the parchment and place in the hot pan. No getting burned. Just make sure the parchment isn't sticking out from under the lid. I bake at 450 lid on 30 mins, then from 5 to 15minutes more until the level of brown has been reached.

      I was going to suggest the same. Using parchment will make it so much easier to place dough in the Dutch oven.

    Love your backsplash. Just beautiful. My granite is so cold it is a heat sink. I place bread bowl on wooden cutting board or heavy folded towel. Much faster rise. Sourdough bread looks amazing.

    I love this! I have the exact same bread machine. My question is are you taking the dough out after the second rise and skipping the 3rd rise that is part of the #8 cycle? Mine comes out pretty stiff but I have left the dough in for the entire cycle

    Thank you. I have the very same machine and I am convinced you can do useful stuff with it. Their recipe book is a joke, though.
    There should be more videos like this. However, to be fair, you do everything outside the bread machine except the initiatl mixing.

    Miss Pam, I just went to your bookstore, and did not see what I was praying for. A book on cultivating, and maybe killing, but mostly making sour dough bread. Do you have such a critter?

    I neglect my starter terribly and was so surprised to hear that you can actually kill it.
    I try to keep my jar if starter near the front of the refrigerator shelf where I can see it. I'd like to say I feed it regularly but lately, I've been feeding it when it crys (gets a layer of liquid on top). If it gets shoved to the back of the shelf, it gets forgotten.
    Another thing I do if I have a really robust discard, I'll smear some (really thinnly on a silicone pad or waxed or parchment paper) and let it dry. I place these dried shards of starter in a zippered bag into the freezer. Now I have a dried starter that I can rehydrate if I do actually kill mine. 💖🌞🌵😷

      @@RoseRedHomestead, a lot of starter for sale comes dried. I got my dried starter free from friends of Carl Griffith 1847 sourdough (well I provided a self addressed stamped envelope.) And it was fast to activate... 3 days? 💖🌞🌵😷

    i have chronic problems with my wrists and kneading bread isn't always possible for me. thank you so much for showing how to make a more traditional sourdough boule with help of the bread machine! i have the same machine and tried the recipe included in the recipe book and it was truely awful. your version utilizes the bread machine for the steps i need help with without sacrificing quality.

    I tried this yesterday and I wasn’t sure if the bread machine has only one knead cycle for the dough only setting. I left mine in there for 3. Maybe I should have taken out after one. It did come out pretty good but didn’t have all the air pockets!

    Temperature of a starter also plays in the "tanginess" The warmer the air temp you have your sourdough in, often the "tangier" the starter is. You may notice that , when you purchase starters, the ones noted from hot weather countries tend to be "tangier".

    Sooooo I made this 2 times and it turned out well....next 2 times (last was today) it didn't rise much at all and while it was supposed to be rising, the top got a little hard/crust like. What is that from?
