As a straight woman, I will admit you are an aesthetically beautiful man but what truly makes you such a handsome fellow and so enjoyable to watch cook and bake is your mannerisms, skills, humor, and your cute personality that you bring to your teaching videos. I've watched other cooking videos and they are very utilitarian and don't have anywhere near fun and humor that makes watching you cook so enjoyable. Have you heard of mousse cheesecake? My family's recipe is for Amaretto mousse cheesecake that is very light textured and my mother usually makes a strawberry sauce to go on top of it. She also tweaked the Amaretto mousse recipe to make a creme de menthe version decorated with chocolate ganache instead.
His manor and tone of voice make easy viewing and the way in which everything is explained in simple, easy to understand English is what makes these videos watchable for me.
The best way I have found to make the filling for the baked so you don't get all the air in it is to use your food processer. It doesn't add the air that whisking with the mixer does, and the cream cheese comes out silky smooth with no little lumps of cream cheese. Takes me about 5 minutes from start to finish. Yumm

In the case of the hazelnut spread, I'd assume a fat needs to be taken out to make room? etc etc.. If it browns too quickly you can cover the top with foil! That should help :)
