    My mom was born in New Mexico, my grandma grew up there. Even after moving to California they made versions of these beans - always with ground beef, pintos, canned tomatoes, green chiles, oregano, and cumin. I think that is what makes the recipe New Mexico. We always had cornbread (not sweet!) with it. Thank you for the recipe.

    You were my inspiration! It's been life changing! Because of you (and Anna from Fermented Homestead) I can a pound of beans almost weekly. Let's say at least 3x a month. You did a video a while ago reworking a recipe someone sent you. I think it was beef and bean burrito in a jar. It included rice!! It was decidedly not a safe recipe, and your friend challenged you to make it safe. Which you did beautifully.
    I was entranced watching that video. My mind was racing with ideas! I immediately got to work. The next day, using a tested safe recipe and your inspiration I canned what I call EBT Red Beans & Rice! EBT meaning Everything But The "rice." 😁 I made a Creole seasoned stock and swapped the dry spices for classic Creole spices.
    The right stock and the right seasonings make all the difference. I will be adding New Mexico style pinto beans to my EBT collection! So Thank You!

      I was going to ask about using red beans and doing a red beans and rice with the ground beef meal starter. My hubs loves RB&R but always uses the Zatarains-I know terrible due to all the sodium and other crap ingredients. But doing this right here will put that to shame! What seasoning recipe do you use for a creole seasoning blend @julianaminium1199? Thanks everyone ❤

    Thank you Lisa . I have enjoyed your videos .Yes I use black bean and Kidney bean and taco meat for a taco bake with a cornbread topping for tonight meal. My canning has been a life saver. My Husband had cancer and I need easy food to make .He passed away June 2 2024 and I started my cancer Journey June 4 2024 and on the road to recovery, I really enjoy all the canner in this collaboration

      So, I just looked up the company you recommended. Is this a bulk bean place? Would love to know why you like this company. Their website looks fabulous but I have questions about them. Are the beans flavorful? Fresh? Grown by them? If you have a moment to talk about it that would be fabulous. I realize I could call them but a personal recommendation goes further in my book. Thank you!

      @@rebeccabeavers897 They certainly are more pricey than the normal grocery store. But, their beans are less than a year old which helps them cook much better (not as tough or hard). They also support a number of Mexican and other country small farmers. Professional chef's normally order from Rancho Gordo. Fantastic customer service as well. They have the 'normal' beans as well as some more rare like the Marcella etc...

    Our household eats beans every week. It's an affordable protein, versatile, and stores well on the shelf.
    😭 The saddest part of the month is when Canuary ends.
    These videos have been the best and most entertaining.

    I really can't thank everyone enough. This is my 3rd year participating and can't wait to get busy. Year one I watched. Year 2 I started making recipes my family would like. This year came to a quick halt do to an accident at work and a shoulder surgery 12 days ago. I was upset but now thanks to everyone's wonderful recipes and great instructions I can't wait to get the all clear from my doctor sometime in April. The awesome part this year has been collecting these recipes and sitting with the family to map out what we want and how much we can grow ourselves to get them made for next fall. Thank you all once again for reminding us that we can do it.❤❤❤❤

    Oh, Leisa! Say it isn't so! My 1st Canuary can't be over!😢 Have learned so much. And made a to do list of so many of your and the collaborators recipes.
    I include beans in my meals alot. Today's recipe is a great starter for so many things I cook. Just can't stop thinking about all the deliciousness that will be filling my pantry shelves.
    Where once there was just an avid dehydrator, thanks to Darcy! There is now a serious prepper and future canning convert. Thanks to you Leisa!

    Back when I got married in 79, we went to visit my husband's Mexican friends in Texas. Lucy taught me how to make tortillas from flour. These beans would be great to have with them. I usually eat my beans separately from the beans. Great idea. It saves time. Thankyou.

    I am so happy I have been following the Canuary videos. Such a diverse array of recipes. Some of which might get me to eat a few more beans!     I LOVE beans!!! Actually have nearly 50 varieties of dried beans. As you may have guessed, I try to eat a bit of them daily.....They are sooo good!! Thank you Leisa for this collaboration.     No, say it isn’t so! How is this the end of my very first Canuary?!?
    Well, I have enjoyed myself more than I imagined I could. I took notes, I printed things out, I watched several videos multiple times. I learned a lot and gained confidence.
    Thank you from the bottom of my heart for all you’ve done for all of us out here.
    I adore beans of all kinds and have been trying to get my family on board and I think this meal prep just might be a winner. I like that it’s got some beef but not a lot and could make a great intro into beans and rice as more of a staple item.

    Leisa, SOOOOOOOO HAPPY for another meal in a jar!! This looks fantastic! I like the addition of the ground beef…. DOUBLE protein!
    I’m actually happy that you had a failure. Not that I wanted you to per se, but when you did the “tap test” and allowed us to HEAR the failure compared to the good jars I think that was actually VALUABLE INFORMATION!!!
    Most experienced canners more than likely know that failures have a different sound than properly sealed jars, but not everyone in your viewing audience does.
    I’m sad to see CANUARY coming to an end, but all of you collaborators have worked so hard to bring this to us…. So a well deserved rest!
    Now it’s our turn to go forth with your knowledge and do you and our pantries proud!

    We enjoy meat and beans with rice. I make what I like to call cowboy beans (also called calico beans) but it makes a lot. I am going to try this using the 3 different beans instead of just the pinto beans and use as a starter.

    Definitely doing this! My wife isn't a big bean person, but I eat them 3-4 times a week. My favorite lunch/dinner is pork & beans on toast! A little ketchup and hot sauce on there....yum!!!

    I was born in NM and will certainly try this recipe. When I don’t have the time to make a pot for dinner, I’d rather reach for a home canned product instead of a can from the store.     I'm definitely in the, "Oh, I forgot to soak my beans!" category! 😆
    The pint and a half size are my FAVORITE! Couple years ago, I found them at a local store for 7 or 8 bucks a piece. I didn't want to be "THAT" person and but them all, so I bought a bunch, then waited a week, went back and bought some more. A few days later, they were still there, so I bought the rest! Lol I gave everyone a chance! Haha 😂
    We use beans in several recipies, but not so muchnas a side, unless it's with tacos.

    Been talking about canning for a while now and been watching canning videos like crazy. Watching Canuary videos learning everything I can has given me more confidence to do my first canning soon. My mother will finally be happy when I do cause she has likely given up waiting on me, since she’s been ready for me to start. It’s been more of a confidence thing for me, having never done it before, but boy is she going to be surprised! I’ve been making a list of supplies I need and I’m going to watch Canuary live tonight and I’m just gonna go for it! 😂 I’m so excited, I can’t wait! Lisa, you just don’t know how much this Canuary campaign is just what some people like me needed.     I grew up on Pinto beans cooked in a pressure cooker, I mean everyday!!!! I don't think Mom ever canned beans though. She probably didn't know it could be done. Thanks so much for hosting Canuary, I have gotten many good ideas for winter canning!

    Leisa, I want to thank you from the bottom of my heart. I was so fortunate to have found you when I started my canning experience in 2020. My canning could have gone in such a bad direction had I listened to some out there that do not follow safe practices. I appreciate the time you take in doing all your videos and doing Canuary.     We usually have black beans weekly. However I have a 5lb bag of pinto beans and this recipe will help me get through them. Thank you for putting this collaboration together. The recipes and tips are invaluable. I am a visual learner and love the videos.

    Canuary 2025 has been great - thanks! I love beans more than they love me, but I still incorporate them into my menu plans about 3 times a month. I find that black beans are easiest to digest for us, so if I can this recipe that's what I'll use. Appreciate you and ForJars as well as all the others who put out videos! Great job everyone!

    We have a mixed household...some of us love beans and some hate them! So I compromise by canning beans in small quantities and I use them when the bean haters are not around. 😂 This canuary has been so great!     I want to say THANK YOU For taking time to do this especially after having your surgery you have taught so many of us so many valuable thingss. I'm 60 years old and never had anyone teach me about doing any of the ways to can and stock our pantries. I don't know why because it sure would have kept us from going hungry. Maybe their mom's and grandma wasn't there anymore i don't know . My last grandma (Mammo) passed when i was 10 yrs old.. So again i want to say thank you for showing us how to take care of ourselves and our families.     We are one of those households that uses dried beans on a regular basis. Hubbies favorite is a bowl of pinto beans topped with onions add a side of homemade cornbread.

    I have beans no less than twice a week I am no meat chicken fish person I always have been very Sadler I missed the month of canning family brother in law of 53 years having health issues but I will watch all of it before summer I grew up always cabbing thank you for this great idea everyone else eats beef chicken so I am always looking for things being oldest in my family I am showing other family members how blessings

    Bits and pieces are important! I like that size jar for chili, beans, etc too. Love your assistant hanging around. Love super simple! My spouse doesn't like beans that much so it's not a regular part of my cooking. Thank you for the great collaboration this month Leisa. Much appreciated.

    Beans are a regular item at our house. We really like them, and they are protein too.     Wow. What a great way to end the collaboration. I grew up eating beans. (A Texas girl now living in Alaska) and I don't understand people who won't even trying them. They don't know what they are missing. Thanks for all that you do and for putting this together every year.

    That recipe looks good. I am more of an ingredient canner but have a few exceptions like beef stew. One thing I would tell you about whether we eat beans is that I used them in a regular rotation for chili, refried beans, etc. However, I made quarts of ranch beans from Lori of Whipperwill Holler. Her ranch beans are so excellent that I cannot keep them on my shelf. Lisa... You have to try these. I am not alone when I say that these are the best beans that I have ever had. Trust me.. I'm a Mom!

    Thank you so much Leisa for Canuary! This is my first year participating and I'm amazed at all I learned. I've been canning since 2021 but still have so much to learn. I grew up in a home where my mom feared canning because of a canning accident (explosion) in her youth so it took me a lifetime to overcome my learned fear. Canuary gives me confidence in my canning skills.

    I love canning beans. I grew up with my mom making a huge pot of beans ever few weeks and putting them in the freezer. We ate beans everday. I wish I could show my mom how my beans come out canning. She passed 2 years ago tomorrow. What a coincidence this video came out tonight and I thought of her cooking. ❤❤❤

    Hello Leisa!!! I can't believe this is the last day, video, and recipe for Canuary 2025. Boy, this time together just flew by but that's to be expected when learning & doing what we love to do!!     Bean loving vegetarian here in New Mexico, was raised in Ky though, so we alternate serving our pintos between mashed potatoes and fritos and burritos. Appreciate all the educational info, at my altitude (7,000 feet) we have alot of evaporation in cooking and have to esp watch out for the water level, etc.❤
