I’ve watched a lot of butchers on TH-cam but I have to say you guys cut so smooth it looks easy. A truly professional butcher show that teaches the right way. Salute to you guys!!
Seth, Scott, been watching you guys for a couple of years, you guys do Ohio proud, I wasn't born there but grew up in Cleveland and amazing information, skill & professionalism, don't forget Sean, you guys made me get Victorinox knives, great buy and just love watching the vids, ya'll taught me so much on BBQ'ing and what cuts of meat and how to prepare them. Continued success being kin to the big OH, you all do us proud! Thanks family!
That market of working knives are exeedingly difficuldt to enter, or even be successul at. In the factories I worked in, back in the day- we were every so often try out different brands with different handles and steel quality. One day of working with a sub par knife felt like punishment. So we very seldom were introdused to knives that we felt was as good or better than what we knew. Victorinox was always the gold standard. Love this channel and keep doing what you do.
Excellent video guys! Those knives are bad ass. Picanha is one of the best cuts on the cow in my opinion. With Guga on the internet, I am surprised you don’t easily sell them out.
You folks are crushing it!! I always thought being a butcher was one of the top neighborhood professions. Helping hard working folks feed their families with good quality meat. My Uncle retired a butcher and I wish I’d followed in his footsteps.
Appreciating the changes your team has made in production technique. I don't know how to describe it, just know it when I see it. Very enjoyable to watch and I learned things about carving knives and picking ribeyes steaks and a lot more.
The Picanha is one of my favorite cuts of steak, it's delicious and still relatively inexpensive since so few people are familiar with it. Selfishly, I hope it remains one of the lesser known cuts because beef prices are getting pretty ridiculous.
I cut a whole sirloin and took that piranha off just by watching these guys. I had never heard of nor had i ever eaten one. I agree with you guys about that cut of beef. Cooked it in a cast iron pan and my god, was it tender, so tender I could cut it with my fork. Best be believing that many more will b e cooked here at the house. Next time Lon the grill!!! 😊
that beef looks just awesome! congrats on now having your own branded knives! they look fabulous, and clearly you are enjoying using them! brand V has served you well for many years, hope these new ones keep you going for at least as long! cheers from Vancouver Canada!
All that beautiful wagyu tallow, perfect for some Special Reserve Bearded Butcher Shave Soap, heavenly scented Butcher Bar Soap, team up with a local bee keeper for some quality beeswax, and bless us with some Smoke House Butcher Beard Butter and Balm!!! You fellas got a goldmine there, I’m from NE Ohio, I’d certainly buy some 💪🏾🇺🇸
What even makes a good knife sharper than the rest? I’ve never understood that, I thought it always came down to who or what sharpened the knife previously. I would sit there trying to sharpen the shit out of kitchen knives 😂 I was still a teen and didn’t know better.
The Denver is my favorite steak. IMO it's a good balance between quality vs price, especially as I'm single and usually get 2 meals out of one package (my store usually has them in sets of 2).
First heard about Tritip in 1976. Went to a get together in the Santa Ynez valley North of Santa Barbara and the guy in charge of the grill said, " This is Tritip" and I was like Huh? I did not refuse a portion. Now I slice Tritip up and burn them on the plancha on a regular basis, wife says "Do it again".
Another great video. Definatley do a video on the Picanha. Noticed you didnt hone the new knife as often as your previous ones and they sound different (Sharper) as you are cutting the steaks.
Excellent video fellas that meat looks awesome. Looking forward to trying a new set of knives thank you. Don’t worry about these naysayers. Ohio boys forever and forever Ohio boys!
You guys piss me off.. The way you handle each cut of meat is like artistry, your 30+yrs of being a butcher come shining thru.. Hats off to you.. To watch you handle a knife with such precision and skill to produce the cut of meat you said you would is remarkable.. Again, hats off to you and God Bless Ya...
@@vdelperdang an absolutely insane price for an aeb-l steel knife. i understand it is low batch blah blah...but no way it is worth that price compared to the Victorinox
No hate for anyone that can afford these knives, most of your viewing audience can't won't get into why. IMHO the Victorinox has suited me perfectly and I appreciate the recommendation.
@DareDog. and the Victorinox they used aren't? I'm guessing you meant like tools: craftsman will get job done but Snap On for the discerning technician, perhaps?

Don’t get me wrong, they’re beautiful knives but I’ll still use my victorinox all day. I’ve been using them for over 20 years and have sworn by them from the time my dad introduced me to them when I was a kid in the early 90s. My dad was a butcher his whole life and i followed in his footsteps.
So now the Victorinox knives are obsolete ???? I'll stick with the Victorinox. Thank you. Your new boys need to bring the price down 80%. Have you ever heard of Shun knives ?? THE BEST !!!!!
No. They still use Victorinox daily. You want them to lower the price and lose money and then go out of business? USA made costs a lot these days. Small company. Don’t have buying power like the big companies do.
@kevinlong9254 Yes, i totally agree. I am in Canada and a 30-year plus user of victorinox ( and other knives). I buy them wholesale for 40$ a knife . I know Montana knife company makes good knives, but $492.00. I just can't see it being that much better. $450.00 more
@@DareDog. USA made isnt cheap, but swiss made costs alot too. Welcome to the world of marketing. There are an incredible amount of knives on the market. Hopefully they are legit knives and all the more power to change. On a side note. Our cuts of beef are different in Canada. A great video would be to do something about the way different countries call their cuts while doing it. That would be incredible.
You guys should really team up Gustavo "Guga" from @GugaFoods and @Sous Vide Everything. You guys would make an amazing collaboration series with his crew. He could teach you how to cook that picanha the right way. Just a thought. And if you have any left overs, or maybe a spot at the cutting table for me to come watch and try my hand at trimming a few steaks, I wouldn't complain at all.

The Beef Gurus! Awesome video!
Awesome video! Knives are beautiful
Can't wait to come and vist I'm in the cleveland area
Absolutely, do a picanha video! I’d share it ten ways from Tuesday. Love that cut!
i've noticed you're having issues cutting as smooth as you normally do. muscle memory is key. i can tell you aren't used to that new knife yet.
I would rather buy 10 of the victorinox knives over this $350 knife.
38:51 cant go through pichania wagyu fat with that knife... seems they dull fast...

🤩🤩Letz let the crazies eat they corn lol while we eat perfect cavemen's stake :)
U guys just made me very hungry for a good ribeye steak 😂😂
The new knives look awsome!
6:05 That reminded me of the meat shown in the Flintstones intro, that makes the car tip over 😅
You guy's are at the top of your game when are you going to get your selves a set of Damascus steel knives.
Awesome video, as usual. Like the looks of the new knives. The caveman tacos looked like they needed a little heat - homemade spicey salsa.
Yes please. Do a video on Pichana
So, Victorinox (sp) missed the greatest butchering promotion ever, and someone else swooped in.
Yes all day to everything in this video 🤤 😍 😅

the first cuts off the chuck is the best buy.. pay for chuck but get rib eye. first two or three.

Man, looks like they found an arch-rival to the Victorinox.
You guys should do a collab with Guga foods to explain the different cuts of beef and have that play on a screen in the store
Put some boiled gulf shrimp on a beef taco changes the game
Great knife 🔪

Dahm you guys need to discover/try some Biltong 👌
They have. There is Short video on it.
I prefer the Chuck eye to the rib eye. The chuck is way more flavorful!
BB-QED a Pecaniah this week! 😋
WOW... Great Video.
Very good video, we use to butcher our own beef and hogs, every year. 😊😊😊
The Picaña is amazing. You can sell them to Brazilian Steakhouses, just don't trim soo much fat off them. They like a good thick fat cap on them.

Do the pichana video. I also love my MKC bearded butchers knife now i just need them to release the breaking knife
I think it will be dropping in a few weeks or so.
Those knives are so sharp,it actually looks like they are cutting thru butter. Man,would i like to be in that meat room for a day.

What about a wagu beef cheek? You should cook one of those up
I wish I could buy the meat on line!! Looks delicious!
They do sell bratwursts online. sometimes have limited quantity of meat they do sell online
