- Oddly satisfying food video will make you hungry. Learn how the bakery gets beautiful patterns on bread.
A single or double slash promotes a large opening but a series of small, delicate slashes create a more intricate design.
Most bread bakers score the dough with a blade to create a weak point and direct the rapid expansion. Without this step, the dough can open in unexpected areas and in a rather chaotic manner.
Some bakers opt for a single, long slash, whereas others prefer lots of small slashes that together form a beautiful, artistic design. Regardless of the scoring choice, the goal is to guide the dough into rising predictably, consistently, and optimally.
Some people spray their knife with cooking spray or oil just before scoring.
You can draw the pattern you want to make on paper before you use it on your bread.

@@cupguin Not so, having been in the bakery business 55 years it was all ways done by English bakers just before setting the loaves.
@@cupguin I think the question was aimed at SCORING the bread as opposed to NOT scoring the bread - "scoring the loaf before baking" as a new thing to try... (when you read the question, it MAY sound like the accent is on BEFORE as opposed to AFTER - but I don't think is the case here...) :-)

It's a morph transition done with an editing program. Just the before and after shots lined up very carefully and edited together.

Well done, but that was a demonstration. No tutorial at all. You didn't even lose a word e.g. how to make the colored designs.
There was a picture ad below this video suggesting I buy a ten thousand dollar pizza dough rounder and separated machine. Yes I make my own pizza from time to time but TH-cam, I am neither opening a pizzeria nor am I a mad man.

You could try making them by cutting designs into grease proof paper/ regular paper or printing pictures to cut out (so they're exact). This is what I'll be trying 😃

Are you scoring the bread chilled from the fridge or room temperature? Love your technique!!
Probably not from the fridge. All you need is a really sharp knife or Razer blade. Its super easy.
if your sourdough was proofed overnight in the fridge it's a lot easier to do more complicated detailed scoring
My new razor blade still drags after night in the fridge. Tiny bit better when I freeze for 15 mins.

What I don't get from these loaves is how they control the oven spring. Is there just so many shallow cuts that it equals one big deep slash? Or is there mixture different so that it doesn't burst?
Proofing long enough so there isn't as much expansion in the oven, plus with each cut, there is that space for the expansion to go. If it's a hundred cuts, then all those cuts will expand. If there's only one, that all that energy will escape in that one cut. Refrigerating the dough before scoring helps when you are scoring too.
