Owning a Restaurant in Cambodia: Inside the Kitchen of Kampot's Twenty Three

  • Twenty Three is a restaurant that would do well in any major culinary city. The food is fantastic, the atmosphere is perfect, and the service is exceptional. It's hard to believe that this top quality restaurant is serving roasted seabass with truffle mashed potatoes and bok choi for under $10. But this is Kampot, Cambodia - a hidden gem of affordable and exceptional gastronomy.
    In this video, Jesse Curtis from Flying Potato Hostel interviews Owen, co-owner of Twenty Three. He discusses what it's like owning a restaurant in Cambodia, why he left England to come to Kampot, and why it was the best decision he's ever made. We also get into the kitchen to watch Owen prepare grilled chicken with a Kampot pepper sauce, roasted seabass with a red wine sauce, and a citrus cured barramundi gravlax salad. Yeah, that's some seriously awesome food.

      Thanks! I really enjoyed Kampot too. I couldn't believe the good western food there. Itialian, French, even Dutch. Plus, there's some great fish amok.

    This chef has a terrible posture while he's cooking, much like Jamie Oliver's posture! I bet he gets really stiff around the neck and shoulders!

      This was the first I heard of gravalax but now I'm a fan for life.

    He actually has a skill that translates to the Cambodian economy. Well done. In my case (as a heavy diesel truck mechanic) I'm going to have to bring all the money I ever plan to spend there, with me, when I move there. I'm not going to try to fix trucks, wearing heavy coveralls and steel toed boots in 95 degree weather.
    I'm not sure if I'm going to go with Cambodia or Thailand. Thailand has some northern areas that aren't as hot (if I understand right).

    its sad that so many chefs around the world do not follow even the most basic protocols of hygiene when they cook

    cows and pigs are on the menu, what about dogs! There is really no difference.

      There's a big difference. Dogs are carnivores. Pigs and cows mostly soy beans, corn, stuff like that.

    The problem with the fish in Cambodia is it comes from very dirty waters. I'm talking about waters with fecal bacteria! I would not eat the fish in Cambodia!

      I think the ocean fish is fine.

      But most of the fish comes from the Mekong river, which is used by the people as a toilet!

      gothops hay the river if flowing from Cambodia to Vietnam ok before wrote bad comment to my country you should research how the river ran fist before you said it
