I am impressed how easy Cliff makes it to approach strangers and incorporate them into his photography. He always seems to be non-threatening and wins their cooperation.
Well, I have tried to follow this but to get the exposure control I had to first click the up arrow, select/adjust exposure. Now I do have an exposure setting "up left". iPhone 11 PM, 16.3.1.

No problem at all! You don't need to keep the volume buttons pressed to get the long exposure. You can get a long exposure effect using Live Photos. We have a lesson about that topic, but you can also check this article to learn more about this feature: support.apple.com/en-us/HT207310
Interesting and useful. However, you are male and are not alone. It is obvious you are filming. As a 65 year old female, potentially walking alone in NYC, I don't think it is a good idea to approach and introduce myself to strangers for a photo.
