    I lived in Deep South Texas for 10 years. They have a molasses "pig" shaped cookie called "Marranitos". The recipe calls for unsulphered molasses.
    They were very good. I can't wait to try these. Thank you Dale.

    I made these cookies Dale. I didn't have the Crosby molasses so I used what I could buy at my supermarket. I actually burned one panful, even though I baked it less than recipe time. I adjusted my baking time for the rest. They are delicious and I still got 30 cookies with a 2 inch round cutter.

    Got your email thank you sorry for not getting back, I was in hosp. Your most welcome to the calendar. I enjoy the contact even though it’s only once a year! I think you’re right about us not having the equipment available to tackle prolonged periods of heavy snow . It’s usually council lorries with a grittier unit put on the back during the winter. Anything else usually used on main roads first. I’ve seen an open back lorry with two guys shovelling salt onto the roads. In times of prolonged ice and snow. Hard work!!     Your cookie recipe reminded me of my Grandmother Pearl's Ginger Molasses Cake she made so many, many years ago (the late 1970's) when she was alive and lived up in Richibucto, NB. And we always had it with whipped cream and a mug of King Cole tea. Not so many years ago, I happened upon a shipment of King Cole tea in a grocery store out here in Sunny Alberta. I scooped up what they had. I enjoyed my special tea for about a year. Thanks so much for the memory. Cold here today - we have been somewhat of a deep freeze, but the sun continues to shine.       That was a good find I guess . So many people hav e told that they can't find King Cole outside of the Maritimes .

    TFS Dale.The cookies look delicious!My grandmother used to make a molasses stack cake, when I was a kid.It was several thin cakes, that was stacked on top of it! Make sure you and Angel stay warm!

    Love these cookies. My grandmother always made a molasses filled cookie. They were a soft cookie filled with ground raisins and molasses, then she would cook this mixture on the stove till it got thick and that was your filling for the cookie. I have her recipe somewhere in her recipe box. They take a lot of work but they are so good. She always used a glass to cut her cookies out. I do remember her using lard in the dough part of the cookie and that made them so soft and fluffy. I sure do miss the old time cookies because store bought do not have the taste.

    Greetings from South Carolina and a new subscriber. I just wanted to thank you for your many videos; I have a big backlog to catch up on, but have enjoyed every one so far. We have some things in common: I have an angel too, but his name is Bear and he is nine years old. I did some travel through NB, PEI and NS when I retired (early) in 1999, and I am contemplating a similar cabin on my property right now as a retreat. Another thing we have in common is we are contemporaries (as near as I can guess). So, keep doing what you're doing as I know it serves you well...and makes a lot of us happy too.

    Hello Dale. I know you all up in the frozen north have got ice water in your veins. I inherit some of that from my dad, who was French Canadian. We in eastern PA got around 6 inches and have had temps in the -7- -10 F (as low as 20 C in some spots) range. I like homemade cookies. Will have to try that recipe. Look forward to some of your cabineering. By the way, wood ashes are the best, non toxic thing to use if you need to get traction in icy conditions. Don`t know how much ash you generate with those fire bricks you use. I save all my ashes from the woodstove and screen them and throw the bigger chunks in the garden and save up the dustier stuff to put on the steps. Spring is a coming!

      That is colder than we have had it so far our coldest has been -16C which is roughly + 6 or 7 F. We normally have our coldest weather in January but you never know what might happen. I save my ashes for the garden and use them in the area where I will bet growing beets.

      I didn`t know, but ash from hardwoods actually regulates pH in acid soil. Plus, it adds minerals, particularly carbon. I used to spread 5 LBS. of the cheapest sugar I could buy to add carbon to the garden soil. I don`t do that anymore. LOL

    My mum ,made these cookies for many years and would put a thumb print in the middle and fill with homemade raspberry jam. King Cole tea still made by Barbours but moved many years ago and is now based in Sussex New Brunswick.cheers from fredericton😊

    I am in low east coastal New Englnd and our weather is crazy also. We have had hardly any snow but torrential rain and high speed wind! Temps can flucuate from 50F to sub zero overnight. This Polar Vortex is quite the phenom! Going to be icy and frigid again this week! I have been cooking and baking non stop for the sense of comfort and hominess that comes when we don't venture outdoors. By the way I kept waiting for your teacup to tilt further and spill its contents! Wanted to climb into the video and say 'watch out'! Ha ha We would call a similar cookie 'Joe Froggers'. Love molasses and spice cookies. I will try these this week on the coldest day!

    The butter reminded me of a soup place we went last night here on the Black Sea town of Heracleia ( my wife’s hometown) They served us melted butter in our soup and a big bowl of fresh sourdough bread

    Your cookies looked excellent and you make the process look quite straight forward. Enjoyable watching. Looking forward to the garden vids. Was watching a weather vid for your area on TH-cam. It’s hard to imagine what it must be like living with weather so severe as that. Here in Glasgow with a snowfall of one inch and a hard frost at minus five can cause big disruption. Ten inches of snow and above with frost and the place starts to close down. Glad you didn’t do this vid from the cabin, you could have ended up trapped in a monster ice cube! Stay well, stay warm. I think the big difference is that we are used to it and prepared for it ,the highways department has lots of equipment and normally they can keep up with the storm and a day later everything is back to winter normal. Our west coast is a lot like your situation they don't get a lot of snow so don't have the equipment to handle it and a large storm shuts them down on the brighter side the daffodils are in bloom out there right now and mine won't bloom until late April. Did you get my email after Christmas thanking you for the Calendar. Much appreciated.

    Molasses are my father's favorite and they make good gingerbread men too. Very Cold and crazy weather . I love a good cup of hot decaf tea too; it's a warm hug. Angel is such a good dog!🐕

    Always loved molasses. When making gingerbread, if the recipe didn't call for a cup of molasses. I wouldn't make it! Thanks for the cookie recipe. Ice is our bane in NH as well.Our steep driveway is glare ice. We always clear our own snow, but I'm hoping to find someone to sand our way out. There is something about your favorite tea...

    I couldn't get the recipe link to work but I googled "pubnico" and the recipe came right up on the Crosby site. We had a very similar weather week here in Michigan, school closings, 12°F right now. Nice to see you and Angel warm inside enjoying tea and cookies!

    Good grief that's cold. The only time we shut roads is when they flood, although I did see some pictures of one of our highways that the bitumen melted in the heat.

    Hi Dale. These look similar to Moravian cookies but easier to handle once rested. I can't get molasses very easily here so i might use half treacle, half golden syrup. Thanks and greetings from England.

    I love molasses. I make a brown bread with molasses. That will be next week. Made five loaves of raisin bread today and tomorrow snickerdoodles. But I'm craving those lovely molasses cookies you made. We had some cold weather here in Connecticut this week so a lot of baking going on. Maybe this weekend we can tackle those molasses cookies. We love hybernating in the winter.

    The cookies looked fantastic. I have been craving molasses cookies for about a week. I may make some soon... but i hate rolling out dough so I will the ones formed into a ball and rolled in sugar. I have to make at least a double batch in my mixer. The bosch mixers work best with bigger loads.... but I am willing to bet I can find helpers to assist me in eating them. :D

      My mothers Molasses Cookies were what we called a drop cookie you just dropped spoonfuls of the dough on the cookie sheet . Thicker than these but very good.

    My grandmother made these, just called them molasses cookies. No idea about the tea, I was raised on Tetley.

    I just love soft Molasses cookies so I am going to give this a try. I always enjoy watching you bake, but I need to ask you a question Dale. Can you make a carrot cake with cream cheese icing? That is one type of cake I crave and I was thinking you might have a favorite recipe to share.

    I had to go and look to see if we had any cookies but no the cupboard is bare.. lol. My mother used to bring me Yorkshire tea among other things when she came. Your weather sounds very strange our temps are up and down - 9 we the lowest but we might get +6 tomorrow and rain.

      I suspect our favourite tea is always the one we grew up with. Yes the weather is nuts. We had heavy rain night before last and all of the ice is gone and today it is only -1.

    I saw you had a new video and i was so thrilled! The cookies look wonderful! You have often mentioned you keep your home quite cool in the winter, i was wondering what do you keep your house temp at in winter in ferinheit?....I have been wanting to ask you for a while, as im curious! :))

      Thank you Kelly my living room is the warmest because that is where the heat pump is so it is around 20C there roughly 19F other rooms are cooler depending on the day 15 to 17C.

    The weather here in Virginia has been all over the place. Crazy Dec and Jan. I don't like molasses. If you wanted to make a smaller cookie, you could always use a glass. No licking the screen this time. LOL

    I think you have a great dog there. If I was eating those in front of my mom's late dog, she'd have them inside her once I turned my back. They look yummy!

      I guess I would have to say self taught it has always been a subject that interested me . I have book cases full of cook books and I have always been addicted to cooking shows .

    After three years how do you like your Jotul stove in your cabin.I am building a 500 sq ft cabin.I seen your stove video about three years ago.I was want to know how you like it now that it has been in use for three years.Thanks

      I love it Scott and I think it would work even better in a 500 sqft cabin the only issue I have with it is I can easily over heat my small cabin with it.
