Nisua, Cardamon Sweet Bread

  • Nisua is a Finnish sweet bread flavored with cardamon. It's a rich egg dough, reminding me of briochè.
    Also known as Finnish kryptonite!
    Nisua
    4 cups mild (I used almond milk)
    1 1/2 sticks butter (3/4 cup)
    1 teaspoon salt
    2 cups sugar
    1 tablespoon bakers yeast (1 pkg dried)
    4 beaten eggs
    1 tablespoon cardamon
    about 5 pounds of unbleached organic bread flour
    Add the butter to the milk and heat until butter is melted, allow to cool, add sugar & salt. Proof the yeast with a warm water and 1 TBLS sugar. Mix everything together except the flour. Once mixed add 6-7 cups of flour to make a sponge. Allow sponge to rise for 30-40 minutes. Add the rest of the flour and knead until smooth and springy. Place in a greased bowl and allow to rise again for and hour or until double in bulk.
    Punch down, form into loaves and let rise another 30-40 minutes.
    Place loaves in a hot 350F. oven for 35-45 minutes (depending on how big your loaves are)
    While still warm brush the tops with coffee and sprinkle sugar on the top.
    This bread freezes very well and ships well too
