As some one who actually cooks everything this man does is absolutely appalling... thats not onion soup.. its barely sauteed onions covered with bread and cheese. Im really suprised there wasnt 3 giant spoons of mayonnaise somewhere..
So much wrong with this video. The onions aren't cooked nearly enough. You got them to the first stage of becoming somewhat softened and translucent, but they barely reduced in size. Your onions should reduce in size to at least 1/4 the original amount, and be a medium-dark brown color. Huge problem with the cheese as well. Why use something like parmesan which does not melt well? Stick with the classic gruyere and/or swiss. It also seems as if this recipe would be quite bland. French onion soup should have some sort of herb in it, generally herbs de provence. Not really sure why you use mustard at all. Have never heard of this(maybe its good) but it really isn't french onion soup then. This is more, the "what I could find at costco onion soup". Might be good, just a really odd recipe.

My Difference for when I make french onion soup is I cut the onions differently, and I follow the Julia Child recipe. If you cut the onions in half after peeling and then cut them into thin strips from the stem end down, you can almost turn the onion slices into noodles. Child is god when it comes to cooking, give her a nod and your dish will turn out great :)

Good Job Jack, your recipe looks easy to follow. The people with negative comments down below need to get their own channel and stop filling yours with negativity.
Cooking the garlic first allows the butter to be garlic flavored so long as the heat isnt too high or you let it cook too long. When the garlic starts to turn golden, the onion will slow down the garlic's cooking process and at the same time absorb the butter and garlic favors. You would need a longer cooking time if you reverse the order of cooking which also means a lower cooking temperature.
@AkemiAizen you can do whatever you want. it wasn't a lot of salt and pepper for that huge skillet. that soup made 8 bowls worth. Not putting the cheese on it is like making cupcakes without frosting.
I usually melt the butter with some oil so it won't burn and add salt/pepper and some brown sugar, it gets the onions really nice and caramelized without being too sweet since the salts already in there. Also yes! Also buy low sodium stocks, best choices.
The most mind boggling part is that you start with a can of beef broth at the beginning of the video, then add chicken broth while cooking. What the hell

As a French, may I say that your onions slices are a bit big :) :) The tip to bake the top in the broiler is good, but it is better when you add grounded pepper on top. You may notice that 'onion sauté' can be served as an accompaniment with any meat. Bon Appétit :)

You need to caramlize those onions for a good 40 mins. Add sugar as well to aid the carmelization. That couldnta had tasted too rich.
