One of the best things about Winnebago (which Itasca is their luxury brand which you probably know Josh), is that they can supply most of their own parts for all their motorhome's right back to the late 60's.
If you go to Winnebago's site you'll see on there that under Resources there's a bit for user manuals which will give you pretty much all Winnebago's models for all the model years.
They do the original Brochures (with the specs if you need to know them), user manuals, wiring/plumbing diagrams, all the parts lists (so that if you need a bit from the factory you give em the code and they'll send you that exact bit, not cheap usually but better than most manufacturers who can't give you replacements).

Apologies I do not have historical pricing data available. This video is several years old and the market conditions are completely different now. I'm not sure the data were it available would really even apply well today
